This is the recipe for my favorite healthy pasta sauce. Served with shrimp, in a thick white wine spice infused sauce, this pasta dish is luxuriously thick and flavorful but very easy and quick! Open for full recipe... Chop up 12-24 good quality tomatoes, with core removed, and one large yellow onion or two small ones. Also add some fresh garlic cloves to taste (I add about 4). Drizzle with a little good olive oil, add some salt and pepper. Cook this in a low heat oven at about 250 degrees for quite a while. You want everything to melt together and get a little golden, but not caramelized. This takes about 30 min in my oven. Put pasta to boil in a very large pot, in very salty water. Do not overcook or I will come to your house and tickle you. In a sauce-pan or wok, add your oven mixture over medium-low heat. Add a little wine to it, red or white is fine. Add desired spices especially some turmeric. The result should be a fairly liquid golden-red sauce. The secret ingredient: when your pasta is almost cooked, take a saucer and mix a half tablespoon of cornstarch with a little water. Mix well. Add this mixture to the sauce. Stir for a few minutes. Your sauce will thicken just enough and become deliciously velvety. If desired add some organic defrosted shrimp. Drain pasta and add it to the sauce, and mix over very low heat. Serve with copious fresh parmesan cheese and make a smug face at people who ask you how you made it, or share the recipe with them, as long as you like ...
