Rau Muống Xào Chao - Water Spinach (Ung Choi) and fermented bean curd are easy to find. Available in most Vietnamese grocery stores throughout the US When the two are combined, it becomes a tasty dish. This dish can be something unique and different to share with your family. Great for vegetarians as well. Materials: - 1 bunch Water spinach - 1 or 2 cubes of fermented bean curd - Garlic finely minced. - 2 tablespoons of cooking oil. Method: Clean water spinach, trim old or bruised leaves. Rinse and drain. Put the pan on the stove, wait for the oil to get hot, add garlic and cook briefly. Pour in spinach and stir. When oil is absorbed into spinach, add bean curd. Stir well, taste test for the right flavor. When satisfied, pour into dish. Serve with hot rice.
