Saute 1 finely chopped onion in butter or bacon grease Add 3 cloves chopped garlic Put in food processor with 2 cans drained black eyed peas Process until smooth Add one 4 oz can of green chilies Add one fresh, seeded jalapeno pepper Add a 8 oz package of cream cheese Process until smooth Add hot sauce or chipotle sauce to taste Salt and Pepper to taste SAM'S CORN AND BACON 2008 IT ALL BONANZA DIP ... 3 corn on the cobb, steamed or boiled 1 package of bacon, cooked crispy - cut into small pieces cut corn off cobb and put in food processor Add one clove raw garlic process until smooth Add one 8 oz package cream cheese a splash or two of hot sauce Put in bowl and stir in half bacon Add salt and pepper to taste sprinkle remaining bacon and chopped chives on top. REMEMBER!... DO SOMETHING WONDERFUL FOR SOMEONE IN 2008! Greetings! Keeping with the theme of the evening, we are continuing with some New year
Greetings! Keeping with the theme of the evening, we are continuing with some New year's Eve appetizers for our supper tonight. Now we are going to use some of that cocktail sauce we made to top off our fabulous crab dip. I first had a crab dip like this more than 20 years ago (doesn't seem like I should be old enough to say that) a friend of mine made something similar using canned crab, which I don't care for, but you can use anything, fresh crab, canned, crab, or like I am using, Imitation crab meat. However you choose to do this it will taste wonderful! This dip is simple to make, and had simple ingredients. It is ready when it is ready and there is no waiting. You can throw this together in no time and satisfy those hungry guests! Crab dip my way: 2 bricks (8 ounces) cream cheese, softened 1 lb flaked imitation crab meat divided in half 1 tablespoon lemon juice 1 teaspoon Old Bay Seasoning 1 teaspoon celery salt 1 teaspoon garlic powder 3 or 4 green onions chopped fine, white and green parts Cocktail sauce In a mixing bowl whip softened cream cheese until light an fluffy. Add in 1/2 of the crab meat, and the lemon juice and seasonings. Mix well until completely combined. Spoon into a bowl or a pie plate. Top with remaining crab meat. Spoon over about 1/2 to 3/4 cup of cocktail sauce and spread over the crab meat. Garnish as desired and serve with crackers or baguette slices. This is also wonderful as a topping for a canape'. Here's more: STORY: Thailand's central Suphan Buri (pron: Su-pan Bu-ree) province is the world's biggest rice exporter in the world. But this year rats have invaded the rice fields and are eating up the crops. But when life gave them lemons, the rice farmers decided to make lemonade, and have been selling rat meat along the highway, to compensate for their losses as they celebrate the year of the rat. [Jong Oomsri, Rat Meat Vendor]: (male, thai) "The farmers want us to take all of these rats away. Even though it's the year of the rat, they don't want them because they destroy their rice crops. The rats are good value for money." The rats are caught in bamboo traps. After being boiled and cleaned, they are ready to sell to food vendors and wholesalers. Rat meat is also a traditional dish in Thailand. And with a little basil and red curry locals say it's even better than beef. Also make friends on Facebook at http A special dessert usually reserved for Chinese New year, and it is indeed Chinese New year very shortly! This is called Chinese New year Sweet Rice Cake 年糕. Joanne doesn't like many sweets but she likes this and has fond memories of it being prepared when she was little; then it was made in a huge caldron and it was so hard to stir it took three grown men and a big stick to mix it all together. We made it in a regular mixing bowl and Joanne stirred the Sweet Rice Cake 年糕with chopsticks.
