mexican chicken Ingredients 4 boneless skinless chicken breasts 2 cans cream of chicken soup 2 cans cream of mushroom soup 2 cans rotel tomatoes 16 oz. velveeta cheese 1 1/2 cups shredded sharp cheddar cheese 1 large bag doritos (regular or cheese flavored) prep work preheat oven to 350 degrees in medium - large sauce pan, boil chicken until done after chicken cools, shred (don't cut) into bite size pieces cut velveeta into small pieces (about 1 inch squares) helpful hint: place velveeta into freezer for about 30 minutes before cutting - will make a lot easier to work with preparing dish in large sauce pan, over medium heat combine the following ingredients both cans cream of chicken soup both cans cream of mushroom soup all (cut up) velveeta cheese stir to combine, until velveeta is melted add both cans rotel tomatoes stir to combine add pre-cooked pre-shredded chicken breasts stir AGAIN to combine all ingredients remove from heat in 9x13 baking dish layer enough doritos to cover bottom of baking dish pour soup-cheese-chicken mixture over doritos add a few more doritos over mixture - bury them with spoon crunch up the remaining doritos , pour evenly over top add all sharp cheddar cheese bake for 15-18 minutes remove from oven, let stand for about 5-7 minutes enjoy!

In this video, Betty demonstrates how to make her version of "Blakemore" Peas. The recipe is adapted from a 40-year-old recipe created by a parson's wife in Betty's small town. It is colorful and delicious dish--and a vegetable that will appeal to kids, also! Ingredients: 1/2 stick butter or margarine 1 medium onion, chopped 1 cup velveeta cheese, cubed 2 oz. jar sliced pimientos 10 3/4 oz. can condensed cream of mushroom soup 10 oz. package frozen peas Place the frozen peas into a medium-sized pot containing about 3/4-inch of rapidly boiling water. Return the water and peas to boiling and boil for 5 minutes. Drain the peas through a colander in the sink, discarding the water and placing the drained peas back into the pot. In the meantime, make your Blakemore sauce. In a medium-sized skillet, melt 1/2 stick butter or margarine. Add 1 medium chopped onion, and saute the onion until clear. Add 1 cup cubed velveeta cheese, a 2 oz. jar sliced pimientos, and a 10 3/4 oz. can of condensed mushroom soup. Blend all together and cook over low heat, stirring occasionally, until smooth and bubbly. Pour the Blakemore sauce over the cooked peas in the pot, until you have the consistency you like. You may have some sauce left over that you can use for another purpose. Pour the finished Blakemore peas into a nice serving dish, and serve while hot. This is a vegetable recipe that will become one of your standards, as it has in my family!

Lynn is a great friend that I met on YouTube, and she sent me this recipe a while back. I think this is a great hearty dish for Super Bowl Sunday! I made this last night, and my family just *loved* it! It's a spicy dish that is made like nachos, but after baking in the oven for 15 or 20 minutes, it takes on a texture more like enchiladas! The taste is perfect, but if you like it hotter, just add some jalapeno peppers to your serving! Ingredients: 1 pound ground beef 1 large chopped onion ½ pound cubed velveeta cheese (If you cant find velveeta cheese, you may use any American cheese spread or use Cheddar cheese.) 10 ¾ oz. can Cheddar cheese soup (I used Nacho cheese soup, only because it was what I had on hand.) 10 oz. can Rotel diced tomatoes and green chilies large bag of plain Doritos corn chips Brown 1 pound of ground beef and drain grease. Add 1 large chopped onion, ¼ pound cubed velveeta cheese, a 10 3/4-oz. can of Cheddar cheese soup, and a 10-oz. can Rotel tomatoes and green chilies. Cook all of this on low heat, until the velveeta is melted, and everything is blended together. In a large baking dish (13-inch by 9-inch by 2-inch), place ½ bag of plain Doritos and then pour ½ of the cheese mixture on top of the chips. Ingredients: 1 pound lean ground beef 1 teaspoon salt 1 tablespoon butter, melted ½ medium onion, chopped 3 tablespoons butter, melted ¼ cup flour 2 cups milk 2 cups velveeta shreds (You may use shredded or cubed cheese of any type that you like with a burger.) approximately ½ of a 22-oz. bag of frozen French fries that have thawed for about an hour cooking oil spray Saute ½ chopped onion in 1 tablespoon butter in a small skillet. In a large skillet, place 1 pound of ground beef and 1 teaspoon salt, and brown, stirring frequently, until it is crumbly, and no pink is showing. Drain off any excess fat. In a medium saucepan, melt 3 tablespoons butter, add ½ cup flour, and stir until there are no lumps. Add 2 cups of milk and 2 cups of shredded velveeta cheese.
