Misconceptions about vegetarianism abound. Many people mistakenly assume that they will be forced to subsist on "strange" foods like wheat germ, or survive on lettuce and brown rice. Others are concerned that their diets will be tasteless or unhealthy without the hamburgers, chicken, cheese and other animal products that they are accustomed to. Demonstrating to vegetarians-to-be that compassionate eating is delicious, easy and healthful is why vegan feed-ins are so important. Feed-ins work because rather than telling someone what they can't have, they showcase foods that are available. Most individuals transitioning toward vegetarianism are amazed at the wealth of new tastes they can enjoy. Whether it's a vegan version of chicken nuggets or a creamy dairy-free ice cream cone, vegan feed-ins give the public delicious, healthy samples of cruelty-free food. The vegetarian samples provided are always examples of foods that are readily available at mainstream supermarkets and affordable to the average household. Rather than presenting vegetarianism as a diet of abstinence or sacrifice, vegan feed-ins demonstrate the variety and abundance of vegetarian eating and present it as a mainstream, healthy and positive lifestyle choice.

When I searched for recipes and videos, I saw that our friend Tyboze made these before, so these are also for him! vegan No Bake Cookies Recipe Ingredients: 1 ½ cup white sugar ½ cup almond milk ¼ cup earth balance margarine 1/3 cup cocoa powder 1 tsp vanilla extract ½ cup peanut butter 3 cups quick cooking oats How to: In a medium saucepan, combine sugar, almond milk, margarine, and cocoa powder. Bring to a boil and cook for 1 to 2 minutes. Remove the pan from the heat, and stir in the peanut butter and vanilla extract. Once well combined, stir in the quick cooking oats. Line a cookie sheet with wax paper, and place the mixture onto it by the tablespoon. Leave about an inch in between, because they do spread a little. Refrigerator for at least an hour, or until they have set. Enjoy, they really taste like Reese's Peanut Butter Cups to me. My only regret was that I did not use cupcake liners, because I had a big problem getting them out of the ungreased pan. BUT they were still delicious! Makes 24 Cupcakes 2½ cups unbleached all-purpose flour 1 teaspoon baking soda 1½ teaspoons baking powder 1 teaspoon fine sea salt 2 tablespoons unsweetened cocoa powder 1½ cups sugar 1 cup nonhydrogenated margarine, softened ½ cup shortening 1 cup plain soy, oat, or rice milk ¼ cup unsweetened applesauce 1 tablespoon plus 2 teaspoons white vinegar 1 teaspoon red food coloring, or 2 teaspoons beet juice 1 teaspoon vanilla extract Preheat the oven to 350F. Line two 12-cup cupcake tins with paper baking cups. Sift the flour, baking soda, baking powder, salt, and cocoa powder into a medium bowl. (I used a whisk) Cream the sugar, margarine, and shortening in a separate large bowl with an electric mixer on high speed. Incorporate the milk, beating well. Recipe Adapted from Bobby Flay Throwdown Gingerbread Cookies www.foodnetwork.com Martha Stewart Gingerbread Cookies www.marthastewart.com Ingredients: 1 ½ cups all purpose flour ½ tablespoon cinnamon ½ tablespoon ginger ½ teaspoon nutmeg ½ teaspoon baking powder ¼ teaspoon salt 6 tablespoons vegan butter ½ cup vegan brown sugar 2 tablespoon almond milk ¼ cup agave nectar Directions: Whisk together the all purpose flour, cinnamon, ginger, nutmeg, baking powder, and salt. In a separate mixing, use an electric mixer to cream together the vegan butter and brown sugar. Slowly beat in the almond milk and agave nectar. On a low speed, slowly beat in the dry mixture until combined. Gather the dough, and place between two sheets of parchment paper. Roll the dough ¼ inch thick and freeze for about 20 minutes until firm. Preheat the oven to 325 degrees F and line cookie sheets with parchment paper. Whisk together flour, 1/2 teaspoon sugar, and salt in a large bowl. Add in small pieces of vegan butter. Use a fork to cut the vegan butter into the flour until it forms a coarse cornmeal mixture.
