In this video, Betty demonstrates how to make a Multi-Purpose Baking Mix. This is a standard mixture of flour, baking powder, salt, sugar, and butter that allows you to quickly make biscuits, waffles, cakes, cupcakes, and many other recipes, without the trouble of measuring each ingredient individually. (Note: some of the ingredient measurements are unusual, because I took a larger recipe and cut it down.) Ingredients: 5 cups all-purpose flour 1/6 cup baking powder ¾ tablespoon salt 1/8 cup sugar 1 cup butter Combine 5 cups all-purpose flour, 1/6 cup baking powder, ¾ tablespoon salt, and 1/8 cup sugar in a large mixing bowl. Stir until thoroughly mixed. Use a pastry blender to cut in 1 cup of butter, until the consistency of the mixture is like coarse cornmeal. Store in an airtight container at room temperature. This mixture keeps well up to 6 weeks. A simple rule of thumb for using this mixture is to use slightly more of the baking mixture as the amount of flour in your recipe. In this video, Betty demonstrates how to make Hot Water Corn Fritters. These are light corn cakes with a lacy, crusty edge. Ingredients: 2 cups plain yellow cornmeal (You may use white cornmeal.) 1 ¼ teaspoon salt 1 teaspoon sugar ¼ teaspoon baking powder ¼ cup half-and-half 1 tablespoon vegetable oil 1 to 2 cups boiling water peanut oil In a large mixing bowl, combine 2 cups plain yellow cornmeal, 1 ¼ teaspoon salt, 1 teaspoon sugar, and ¼ teaspoon baking powder. Add ¼ cup half-and-half and 1 tablespoon vegetable oil. Stir in boiling water, a little at a time, just until the batter is fairly thick, but still runny where the water pools a bit. The amount of water you will need to add will depends upon the type of cornmeal used. If the cornmeal is coarsely-ground, it will require more liquid. Pour peanut oil into a heavy skillet to about ¼-inch depth. Place over medium-high heat. When oil is heated, drop batter by ¼-cupfuls into the hot oil. Fry, about 3 minutes on each side, until fritters are golden. Remove from oil and drain on paper toweling. You may need to fry several batches, depending on the size of your skillet. When you are finished frying and draining the corn fritters, place them on a nice serving plate and serve with fresh butter. Yum! I hope you enjoy this recipe! --Betty

In this video, Betty demonstrates how to make her tasty and filling Date Nut Bread. This bread can be used for breakfast or for an afternoon snack with tea. It is very easy to make, and it tastes wonderful! Ingredients: 1 cup chopped dates 1 cup boiling water 1 teaspoon baking soda 1 egg, well beaten 1 cup sugar 1 tablespoon butter, softened 1 cup walnuts (You may substitute another kind of nut.) 1 ½ cups self-rising flour 1 teaspoon vanilla extract Sprinkle 1 cup dates with 1 teaspoon baking soda, and pour 1 cup boiling water over all. Set aside. In a large mixing bowl, beat 1 egg, and add 1 cup sugar and 1 tablespoon softened butter. Mix well. Gradually stir in 1 cup walnuts, 1 ½ cups flour, 1 teaspoon vanilla extract, and date mixture. Stir, just until dry ingredients are moistened. Pour mixture into a greased and floured, waxed-paper-lined loaf pan. Bake in a 350 degree oven for 40 to 45 minutes, or until a toothpick inserted in the deepest part comes out clean. (I always bake any loaf like this in the center of the oven with a large sheet of aluminum foil on the rack above, so that the top will not over-brown. The aluminum foil may be removed near the end of baking.) Remove loaf from the oven, and let cool in the loaf pan for a few minutes. Remove from the loaf pan, and peel off the waxed paper. Place on a nice serving plate, and slice into equally-sized slices, and serve while warm with fresh butter. This is a simple bread, with a touch of elegance! You will love it ...

In this video, Betty demonstrates how to make a luscious and refreshing Hot Butterscotch Sundae. The hot butterscotch sauce is composed of mainly of milk, brown sugar, and butter. Ladled the sauce over vanilla ice cream, and you have a great summertime treat! Ingredients (for full recipe): 1 ¼ cups milk 2 tablespoons cornstarch ¼ teaspoon salt ¼ cup light corn syrup 1 cup packed dark brown sugar 2 tablespoons butter vanilla ice cream In a saucepan, blend 2 tablespoons cornstarch and ¼ teaspoon salt into 1 ¼ cups milk. Stir in ¼ cup light corn syrup. Cook and stir over medium heat until mixture thickens and bubbles. Reduce heat to low and cook 2 minutes more, stirring occasionally. Remove from heat. Stir in 1 cup brown sugar and 2 tablespoons butter. Serve warm over vanilla ice cream. Store remaining sauce in screw-top jar. Serve chilled, or reheat to use. This makes about 1 ¾ cups of hot butterscotch heaven! Enjoy!!! --Betty

In this video, demonstrates how to make a Dreamy Italian Cream Cake. This is a light, delicate cake that contains flaked coconut. I am using it for my Easter cake this year.
Ingredients:
½ cup butter, softened
½ cup shortening, softened (I used butter-flavored Crisco, but any shortening will work, including more butter.)
2 cups sugar
5 eggs, separated
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup buttermilk (I used 1 cup skim milk + 1 tablespoon lemon juice.)
1 cup flaked coconut
Perfect Pecan Cream Cheese Frosting (from bettyskitchen)
pecan halves and chopped pecans for garnish
In a large mixing bowl, beat ½ cup butter and ½ cup shortening at medium speed of an electric mixer until light and fluffy. Add 2 cups sugar, a little at a time, beating well as sugar is added. Add 5 egg yolks, one at a time, beating well after each addition. Add 1 tablespoon vanilla, and beat well. In a medium-sized bowl, combine 2 cups all-purpose flour and 1 teaspoon baking soda. Stir together. Add flour mixture to the cake batter, alternately with 1 cup buttermilk, beating on low speed of mixer after each addition, until all of the flour mixture and buttermilk are mixed into the batter. Stir in 1 cup flaked coconut. Beat 5 egg whites until stiff peaks form. Fold beaten egg whites into batter. Pour cake batter into 3 greased and floured 9-inch round cake pans. Bake at 350 degrees (F) for 25 minutes, or until a toothpick inserted into center comes out clean. Cool in pans for 10 minutes. Loosen with a knife and remove cake layers from pans and allow to cool on wire racks or flat surfaces (such as trays or shallow baking pans). When cool, spread Perfect Pecan Cream Cheese Frosting between layers and on top and sides of cake. (This is demonstrated in the Perfect Pecan Cream Cheese Frosting video in bettyskitchen.) In this video, Betty demonstrates how to make Fall Festival Funnel Cakes. My recent upload showed my family's visit to the 6th Annual Pottery Festival in Richmond, Kentucky. One of the food offerings that we purchased was a "funnel cake." I am going to show you how to make a funnel cake at home. This is not the healthiest food in the world, but it is delicious! This recipe uses hot oil. Please do not attempt it, if you are not comfortable using hot oil. Ingredients: 1 ¼ cups plain, all-purpose flour 2 tablespoons sugar 1 teaspoon baking soda ¾ teaspoon baking powder ¼ teaspoon salt 1 egg ¾ cup milk peanut oil for deep frying (You may use a different oil.) confectioner's sugar for sprinkling on top blueberry or strawberry sauce to serve on the side (optional) Combine 1 ¼ cups plain flour, 2 tablespoons sugar, 1 teaspoon baking soda, ¾ teaspoon baking powder, and ¼ teaspoon salt. Set aside. Beat 1 egg in a medium-sized mixing bowl, and add ¾ cup milk to the beaten egg. Add dry ingredients to the milk and egg mixture. Beat with an electric mixer until smooth. Heat 1 inch of peanut oil to 350 degrees in a medium-sized pot over medium heat. Cover bottom of a funnel with your finger. Pour ¼ cup to ½ cup batter into funnel. (I found that ½ cup of batter makes a better design.) Hold funnel over center of pot of heated oil. Remove finger from funnel end to release batter into hot oil. Ingredients: 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 2 cups sugar 1 cup butter, softened 4 eggs ¼ cup sour cream 1 cup buttermilk 2 teaspoons vanilla extract ¼ cup sugar (additional) ¼ cup sweetened flaked coconut In a medium-sized bowl, combine 3 cups flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon baking soda. Set aside. In a very large mixing bowl, beat 1 cup butter with an electric mixer, until light and fluffy, about 5 minutes. Add 2 cups sugar and continue beating until mixture is very light and fluffy, about 2 more minutes. Beat in 4 eggs, one at a time. Stir in ¼ cup sour cream and 2 teaspoons vanilla. Now, add the flour mixture and 1 cup buttermilk, alternating between them, beginning and ending with the flour mixture. Set cake batter aside while preparing baking pan. Butter and flour a Bundt cake pan on the bottom, the sides, and around the inner part. Sprinkle ¼ cup sugar on the bottom of the pan and slightly up the sides. Roll the pan around to disperse the sugar, tapping it on the sides to make an even coating of sugar. Leave any excess sugar in the bottom of the pan. Quick and easy recipe for biscuits that can be made for breakfast, lunch or dinner. Tastes much better than store bought. Ingredients: 2c all purpose flour (not self rising flour) 1 Tbsp baking powder 1/2 tsp baking soda 2 tsp white granulated sugar 3/4 tsp kosher or table salt 1 c. cold buttermilk (or sour milk), heavy cream, sour cream or plain yogurt 6 Tbsp. cold unsalted butter, cubed into 1" pieces 2 Tbsp vegetable shortening Optional: Additional melted butter or heavy cream to brush the tops of biscuits before baking Directions: Preheat oven to 425 degrees. Place the rack into the center of the oven so the bottom of the biscuits won't burn. In a food processor, electric stand mixer or by hand in a large bowl combine the dry ingredients. Add wet/ liquid ingredients and mix until a soft dough forms. DO NOT OVERMIX DOUGH or your biscuit WILL BE TOUGH! Place about 1/4 c of dough onto an ungreased cookie sheet about 2" apart. Brush tops of biscuits with the melted butter or heavy cream. Bake for 15-18 mins or until golden brown. Yields about 18 biscuits depending on the size you make them Additional Add- In Ideas: 1/4 c grated parmesan cheese or other shredded cheese 1 Tbsp dried herbs or crumbled bacon
