How To Make Bolognese simple and Delicious (meat-based sauce originating in Bologna, Italy) Ingredients 1 Pound ground beef 4 oz. chopped pancetta 3 carrots diced 3 large celery stalks chopped 1 can crushed tomato ½ small onion 1 clove of garlic Bay leaves 1 cup cream Pinch of nutmeg White wine (optional) Sauté Sauté carrots in a tablespoon of olive oil. (Start with carrots since they take the longest to cook) Add other vegetables (celery, onion, garlic) Add pancetta to vegetables (If you don't have pancetta you can use bacon) Brown ground beef in a separate pan and strain off excess fat Combine sauté vegetables and ground beef and add a pinch of nutmeg Add 1 cup of white wine (optional) Add 1 can crushed tomato Add Bay leaves Simmer for about 30 minutes Add 1 cup of cream Simmer for another 15 minutes Serve over pasta, ravioli, or in lasagna

It's a good general rule of thumb that the more expensive the cut (porter house, T-bone and tenderloin) the tastier the results. That having been said, I have turned out some pretty tasty steaks with more economical cuts by marinating them first. The marinade will not only boost the flavour but tenderize your steak as well. But there is more to choosing your steaks then just the cut. Look for pieces that are lightly marbled with fat. Like a marinade it will boost the flavour and juiciness. Also to consider is the thickness of the cut. If you enjoy rare steaks choose steaks that are an inch or more thick. This allows you to achieve a nice exterior sear while keeping the insides rare. If you enjoy your steaks well done, choose a thinner cut of steak. Cooking thicker steaks to well-done will cause them to be dry. An overview of an upright "pellet" smoker cooker that uses small compressed pieces of smoking wood to cook competition BBQ at a low, slow, even temperature. This model made by Traeger.

(10 to 15 minutes on each side) Place a few sage leaves on each piece of pork Add prosciutto to each piece of pork Top the prosciutto with provolone cheese Place skillet under a broiler for a few minutes to melt the cheese Remove pork from skillet and place on a serving dish Return the skillet to stove top Over a high heat add 1 cup of white wine Deglaze the skillet by scrapping the dripping from the bottom and sides Cook for two minutes on high heat to burn off the alcohol Pour wine sauce through a strainer onto the pork

Mozzarella cheese 1 can crushed tomato ½ small onion 1 clove of garlic Fresh Basil Pinch of sugar Selecting Eggplant Select an eggplant that is long and thin with a small navel. This will be less seedy and less bitter than a round eggplant with a larger navel. Preparing Eggplant Slice eggplant long ways into ½ in slices Sprinkle with salt and place in a colander to drain for about an hour Place eggplant slices on a paper towel to remove moisture Frying Eggplant Heat vegetable oil in a frying pan on medium heat Dip eggplant slices into an egg wash (2 raw eggs scrambled) Shake off excess egg and dip into breadcrumbs Shake off excess breadcrumbs and place in to oil Fry eggplant until the breadcrumbs turn golden brown, then turn and cook for another few minutes Remove eggplant from oil, drip excess oil back into the frying pan and place on a paper towel Making Sauce Dice a few cloves of garlic and sauté in olive oil over a low heat for 5 minutes. Add 1 can crushed tomato and continue to cook over low heat for 30 minutes Baking Eggplant Parmagiana Layer sauce, eggplant, parmigiana cheese, mozzarella cheese, and sauce into a baking dish Make sure the top layer is covered in sauce so it does not burn Bake on a preheated oven at 425 degrees for 45 minutes Garnish with Fresh Basil
