PECAN shortbread RECIPE 4 cups all-purpose flour 1 1/2 teaspoons salt 2 cups (4 sticks) unsalted butter, room temperature 6 ounces cream cheese (not whipped), room temperature 1 1/4 cups sugar 1 tablespoons vanilla extract 3 cups pecans, finely chopped and toasted (toast 5-8 minutes at 350 degrees - watch them closely...they burn easily) Beat together butter and cream cheese in an electric mixer on medium speed for 2 minutes until light and fluffy. Add the sugar, salt, and vanilla and beat for another minute. Reduce the mixer speed to low and beat in the flour until just combined. Do not overmix. Fold in the cooled, toasted pecans. Shape dough into two 8-inch logs, about 2 inches in diameter. Wrap each log in waxed paper. Place logs in zip-top bag and place in the freezer until firm, about 2 hours The dough can sit in the freezer for up to 6 month if wrapped well. Preheat the oven to 350ºF. Unwrap one log and cut into 1/4-inch-thick rounds. Space 1-inch apart on baking sheets. Bake cookies for about 15 minutes or until the edges are a slightly golden, not browned. Rotate the cookies halfway through to ensure even baking. Let cool on the sheets for a minute or two before transferring ...

Ingredients: makes 20
1 and 1/2 cups plain flour
1 cup melted butter
1/2 cup icing (confection) sugar
1/2 cup custard powder
Method:
Mix all ingredients until it forms a dough. Roll into balls and place on a baking paper lined tray. Press down with a wet fork to flatten. Place in a pre-heated 180C oven for 20 minutes. Cool & serve. EASY!
mix in some choc chips or dip half the cookie in melted chocolate for a variation.

The recipe is included below... BUTTERY shortbread COOKIES - 1 1/2 cup of softened butter - 3/4 cup of granulated sugar - 3 1/3 cup of all-purpose flour Preheat an oven to 300 degrees Fahrenheit. In a large mixer bowl, blend together the butter, sugar, and flour on the lowest speed; scrape the bowl frequently. Relocate the dough to a flat surface and roll to a 3/8-inch thickness. Then, using a shaped cookie cutter, cut and relocate the cookies onto an ungreased baking sheet. Bake for 20 to 25 minutes. Makes three-to-four dozen cookies. Once again I did a search for "Best shortbread cookies ever" and came upon this recipe. From the review, I thought it was a winner. Well. Let's put it this way, in my book, not so much. HOWEVER, proving that everyone is different, my niece and her friend (teenagers) liked them. I sent them home with the entire pan. I will be making shortbread again using Tammy's recipe next time. I had forgotten that she had a recipe for it. :/ I found the recipe here: www.eatingoutloud.com 1 cup granulated sugar 2 cups corn starch (consider decreasing this exponentially to approx 3/4 to 1 c) 4 cups all-purpose flour 1 pinch salt 1 lb. butter, at room temperature 1 Tablespoon granulated sugar Add sugar, corn starch, flour and salt to a large mixing bowl. Cut butter into tablespoon sized pieces and add to the bowl Using a spoon or your hands, mix the butter into the dry ingredients When the butter is fully integrated, the mix will be sand-like in texture. It will not form a dough. Pour the mixture into a half-sheet pan (18″ x 12″ x 1″), spreading evenly in the pan. Use your hands to firmly press down on the dough, pushing the fine mixture into an even mass. Using a fork, prick the cookies about 1″ apart across the entire top. This was not an easy task for me. I ended up dipping the tines of my fork into flour every so often to help it ease in and out of the dough. Bake for 40 minutes at 325F, then reduce heat to 300F and continue baking for 20 minutes, or until lightly golden brown around ...

VEGAN shortbread COOKIES 1 cup flour (we did half white, half whole wheat) 1/2 teaspoon baking soda 1/8 teaspoon salt 1/2 cup (1 stick) vegan butter, softened 1/3 cup confectioners' sugar 1 teaspoon vanilla 1/4 cup mix-ins (nuts, chocolate chips, etc.) In a small bowl, combine flour, baking soda, and salt. Set aside. In a medium bowl, cream together the vegan butter, sugar, and vanilla until shiny and smooth. Add the dry ingredients to the wet in two batches, mixing with a spatula or wooden spoon. Fold in mix-ins. On a silpat sheet, wax paper, or parchment, pat out dough to a rectangle about 1/2" thick. Be obsessive about it; waste about 6 minutes making it perfect and squaring the edges. This is important, after all. Using a sharp knife, cut dough into little squares and/or triangles. If knife is sticking a lot, coat it with a little flour. Transfer pieces to parchment- or silpat-lined baking sheet. Bake at 350 F for about 8-12 minutes, until edges are just golden brown and middle is still very light. Let sit on sheet 2 minutes, then cool on wire rack. Makes 12 little shortbread cookies. This can be easily doubled!
