But let's see together what ingredients we'll need: • 4 tbsp of extra virgin olive oil • 1 bunch of parsley • 1 ½ tbsp (20 g) of butter • salt • 2 cloves of garlic • 1,3 lbs (600 g) of fresh mixed mushrooms (in this case, I've chosen porcini, champignon, oyster and honey mushrooms) Let's prepare together the sautéed mushrooms: Begin by cleaning the mushrooms: first of all, cut off the base of the stem, using a knife. (Our thanks to www.peanutbutterandpeppers.com for the great recipe) Makes 2 large portions Ingredients: 1 medium onion, cut in half, then sliced medium-thick pieces 1 clove garlic, minced 1 Tbsp. chicken broth, low sodium 8 oz. chicken breast, boneless, skinless, cut into 1-inch pieces 1/2 sweet bell pepper, sliced into strips 2 cups asparagus, cut into 1-inch pieces (1 bunch) 2 Tbsp. soy sauce, low sodium 1 Tbsp. rice vinegar 1 pinch red chili flakes Salt and pepper to taste Directions: Add 1 Tbsp. chicken broth in a skillet. Sautée onions and peppers in broth for about 2 minutes over medium-high heat, stirring constantly. Add the garlic, chicken, and continue to sautée for another 3 to 4 minutes, stirring constantly. Add the asparagus, soy sauce, vinegar, and red chili flakes. Stir together and cover. Cook for another 2 to 3 minutes or until asparagus is tender. Season with salt and pepper to taste. Reserve 1/2 cup of the arils and set aside. .Refrigerate or freeze remaining arils for another use. -In a large skillet heat the olive oil, add garlic and cook until fragrant. Add spinach and handful at a time and cook until all is wilted. Add salt and pepper and carefully stir and cook slightly, but still green; set aside. -In a food processor, grind almonds until fine. In a saucepan heat cream, add nutmeg and ground almonds; Stir until hot. -Serve over sauteed spinach, sprinkle with arils.

This dish consists of fresh zucchini, sliced and sautéed, and then tossed with a topping of Parmesan cheese, grated lemon rind, and salt and pepper. Delicious and colorful! Ingredients: 1 pound zucchini squash, washed and sliced into ¼-inch-thick slices 1 ½ teaspoons extra virgin olive oil 1 tablespoon shredded Parmesan cheese ¼ teaspoon grated lemon rind ¼ teaspoon salt ¼ teaspoon ground black pepper Saute 1 pound sliced zucchini in 1 ½ teaspoons olive oil in a large skillet over high heat, stirring constantly, about 5 minutes, or until crisp-tender. Remove from heat. Cover with a lid and let stand 5 minutes. In a small bowl, combine 1 tablespoon shredded Parmesan cheese, ¼ teaspoon grated lemon rind, ¼ teaspoon salt, and ¼ teaspoon ground black pepper. Spoon zucchini into a serving bowl, sprinkle with the cheese mixture, and toss gently. Serve immediately.
