Raspberry or Blueberry Cream Muffins 2 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/4 tsp ground cinnamon 1/2 cup butter 2/3 cup sugar 2 large eggs 1/2 cup sour cream 1 tsp vanilla 1 cup coarsely chopped raspberries (or whole blueberries) 350 degrees F, greased 12 cup muffin pan, 30-35 mins. Combine dry ingredients and set aside. Cream butter and sugar. Add eggs, one at a time, then beat in sour cream & vanilla. Add flour mixture and stir just to combine. fold in berries and fill muffin cups. Bake at 350 for 30-35 mins. Let stand in pan 10 mins. then remove and cool on rack.

But today, we're going to show you how to make a moist, delicious dessert called wild raspberry gateau. First...preheat the oven to 350 degrees. Then lightly butter or oil a 9-inch springform pan...dust with flour and set aside. Stir together flour, baking powder and salt...and set that aside. In a large bowl, beat the butter and sugar until fluffy and light. Add eggs, one at a time, and beat until blended. Gradually add the flour mixture and beat until well mixed. Pour the batter into the springform pan and spread evenly. In a bowl, lightly mix the raspberries with lemon zest, about a teaspoon of flour, and about a tablespoon of sugar. Spoon the berry mixture over the batter and bake about 1 hour. Cool on a wire rack, then remove from the pan. Sprinkle with confectioner's sugar and serve. Greetings! Today is Kifli day in my house. This may not mean much to some of you, but to me it is an annual tradition. Both of my grandmother's, my Mommom (my paternal grandmother) and my Nanny (my maternal grandmother) made this recipe.
Although I don't expect that many of you will undertake this recipe, I wanted to share it. Mostly because my cousin who is 10 years younger than I, saw that I was getting ready to make them and asked me for the recipe. I thought I would do the video to show how it is done, so she could have a place of reference.
Kifli is Hungarian for "cookie" it can refer to any small sweet treat in that language. But to me Kifli is a flaky pastry dough that is filled with any number of delicious fillings. Today I have made the traditional prune lekvar, apricot, cherry, pineapple and raspberry.
If you decide to try this, make sure that you make the dough the night before and plan on spending at least a half a day making the cookies. They are a labor of love but well worth the effort.
For me, Kifli help me to remember where I came from and also keep a tradition alive. I think we can all get caught up in everyday living that we sometimes forget that the holidays are not about stuff, they are about love. They are about remembering those who are no longer with us and they are about creating memories with our families and our children so that one day they will do the same.
Forgive me for getting so mushy, gushy, but Kifli day is special for me.
Julie, I hope this helps and I hope you give this a try. If you don't make them for Christmas, do them for Easter.

Base
1 cup flour
1/4 cup icing (powdered) sugar
1/2 cup butter or margarine
Mix flour with sugar in a bowl, cut in the butter until mixture is crumbly and there are no visible pieces of butter. Press into a greased 8"x8" baking dish. Bake at 37F for about 15 minutes or until golden brown on edges and bottom.
Filling:
1/3 cup raspberry jam
1 cup white chocolate chips
4 oz (1/2 cup) cream cheese
2 tbsp cream or milk ( I used milk and it was fine)
Spread 1/3 cup raspberry jam over the still warm crust (not hot crust)
Melt white chocolate chips.
Beat cream cheese and milk together and add melted chocolate. Beat until smooth.
Spread over jam layer. Chill until set (about an hour)
Topping:
Melt 1 cup of semi-sweet chocolate chips with 3 tbsp of butter and blend well.
Pour over top of the layers and smooth out. Drizzle with additional melted white chocolate if desired.
Chill until set.

Raspberry Sherbet, softened 1 cup sour cream 1 cup whipping cream ¾ cup powdered sugar 2 cups fresh berries Preparation Directions: ~ Place ice cream sandwiches in a 13 x 9-inch pan that has been covered with foil. Cut the ice cream sandwiches to fit in the bottom of pan. Spread the sherbet over the sandwiches and freeze for 15 minutes or until sherbet is firm. ~ In a medium bowl, combine sour cream, whipping cream and powdered sugar. Beat with an electric mixer until mixture is thickened and forms soft peaks. Spread on top of sherbet. ~ Cover and freeze for at least 4 hours or until firm. Let stand at room temperature 10 minutes before serving. ~ Sprinkle with fresh berries.
