LOL *this is the second upload of this vid. the first one just uploaded the ending to the vid...grr* quinoa Mac and Cheese 8 oz macaroni 2 tbl of olive oil 2 tbl spoons of quinoa flour 2 cups almond milk 2 cups shredded sharp cheese low fat ½ tsp of paprika Salt and pepper 1 cup of panko Spray olive oil Preheat oven to 350 degrees. Prepare macaroni by directions on box and drain well. In a saucepan, add olive oil over medium heat. Add flour and stir to remove lumps. Pour in Almond milk and cook until thickened. Add Paprika and salt and pepper. Add cheese and stir until melted. Add macaroni and stir. Pour mixture into muffin trays. Spray heated skillet with olive oil. Add Panko and brown. Top mac and cheese with Panko crumbs Bake for 30 minutes 155 calories, 3.4g fat, 1.8g fiber, 8g protein per muffin
