This recipe is for a moist puerto Rican recipe. The Turkey comes out nice and moist and not dry. The trick is to not to overheat it to where it over cooks. Try the ingredients with pork shoulder roast. Instead cut slits into them and stuff them with the adobo rub recipe all over your pork.

www.MiriamBuhr.com There are different styles of sofrito. In this video, I show you one of the ways I make sofrito. First off, what is it? Sofrito is a puree of vegetables and herbs that is used as a cooking base in some puerto Rican dishes such as, soups, stews, and rice. Depending on the region or taste of the cook, the sofrito will take on a different look and taste. For the most part, there is "recaito" which is a totally green colored puree mix used to give lots of flavor to meals. If you use colored bell peppers, like reds, yellows, and oranges, your sofrito is going to take on a red tint. Add "sazon," and the safron in it will give it another dose of red color. Use about 1 to 1/2 cup of olive oil when blending vegetables. Make sure you cut up vegetables in small pieces especially if using a blender. I even cut up the garlic cloves I used in my style of sofrito. It'll save your blender's motor:) NOTE: You can add salt to your sofrito or add sazon to add a saltier taste. I prefer to leave it out and then add salt to the meal as I cook it. If you're trying to decrease use of sodium/salt in your meals, then this is the way to go. There is no heat in the sofrito. The peppers used are sweet. The idea is to give the meal a blast of succulent taste without any kick behind it. That's just the way it is! Now if you want to add heat go for it but then remember it's no longer puerto Rican sofrito. By adding diced tomatoes, and spicy peppers, you've converted this recipe into a ...

The puerto Vallarta, Mexico restaurant is famous for its eclectic cuisine and they share some of their favorites in the book. Chicken Satay and Sauce with Fresh Cucumber Salad Marinade 1 cup coconut milk 1 tablespoon sugar 1 tablespoon pounded garlic cloves 1 tablespoon pounded cilantro root 1 1/2 tablespoons curry powder 1 teaspoon fresh ground pepper 1 pound skinless chicken breast cut into 2-inch strips Combine above ingredients except the chicken breast and mix thoroughly. Add chicken and marinade in the refrigerator between 1 to 24 hours. Thread on to water saturated bamboo skewers. Dipping Sauce In a bowl mix together: 1 19-ounce can of coconut milk 1 1/2 tablespoons sugar 1/2 teaspoon kosher salt 1 1/2 teaspoon cider vinegar 1 teaspoon tamarind pulp 1 cup peanut butter Let it rest. Then in saucepan combine over low heat for about two minutes. 1 tablespoon canola oil 1 tablespoon red curry paste Add the peanut butter mixture to this while on the stove and mix until completely combined. Let this rest. Grill chicken until done, around 10 minutes or less. Serve with dipping sauce. Salad 1 cucumber peeled, seeds removed and sliced to your specifications 1/4 cup chopped shallots Sweet and sour sauce, bottled or homemade Place cucumber into serving dish, add shallots and then top with sauce. 2 1/2 cups medium grain white rice. 5 cups water. 4 tablespoons olive oil. 3 tablespoons sofrito.(jarred or make your own by blending: onion, bell pepper (red,green, yellow), garlic, and cilantro)in a blender. 1/4 cup chopped ham. 1/4 cup sliced green. olives. 1 can pigeon peas, drained. 2 envelope sazon. 2 bay leaves. 1/2 teaspoon tomato paste (optional) salt and black pepper to taste. Directions: Start by heating the oil in a pot at high heat, and when the oil is nice and hot, add your ham. When the ham is cooked and has flavored the olive oil and has browned, add the Sofrito, olives and roasted red peppers. This must stir fry all together for about 1 minute. Next add: the Guandules (pigeon peas), the tomato paste, and all the spices, including the envelope of sazon. Let it cooked for about 2 minutes and then add the white rice and water. At that point, add salt and pepper to taste. Bring this up to a boil. Don't cover yet, let the rice absorb the water. Once absorbed stir gently from bottom to top, cover and turn the heat down to low. Stirring once in between, lower heat and stir 1 more time, then cover. Let this cook for about 30 - 40 minutes on a low heat setting, In every puerto Rican household it is a tradition to make the "Arroz con Guandules" I like to call it one of the main dishes but, in most household's it is one of the side dishes that will compliment that OH SO YUMMY... glazed ham, turkey and or lechon we roast!
