Greetings! Today I am going to show you how to make hash brown potatoes the easy way, with dehydrated potatoes. These are from Honeyville grains. I have recently purchased some long term food storage items to keep and I am trying to learn how to use them so what better than to take you along for the ride. These potato shreds are relatively inexpensive, you could even dehydrate your own by using frozen hash browns. In any case, these potatoes are around 50.00 for a case of six number ten cans of these shreds. They will keep unopened for upwards of ten years and six months after the can has been opened. They are canned with oxygen absorbers within to maintain freshness. Here is what you will need to make these hash browns: 2 cups of dehydrated potato shreds Hot water to cover 1/2 Cup dehydrated onions Hot water to cover 2 tablespoons vegetable oil for frying salt and pepper to taste Place potato shreds in a bowl and cover with hot water. I use water that has been run through the coffee maker. In a separate bowl, do the same with the onions. You will need to wait at least 15 minutes for re-hydration to occur. Drain the potatoes but do not rinse. You may or may not need to drain the onions, this will be up to you depending on how much water may be left in the bowl. I did not drain mine. Heat oil in a heavy skillet and then add the potatoes and the onions. Cook as you would fresh hash browns. Make them as crispy as you would like and season to taste. One warning, I over salted ...

Her timing is off, but hopefully my Americauna hen will decide to be broody again in the Spring. I thought I'd share with you what a broody hen acts, looks, and sounds like. When hens go broody, they stop laying, and desparately want to sit on some eggs -- any eggs. The more the better! They fluff themselves out, don't want to leave the nestbox (unless they find some nice quiet secret place to sit on their eggs, which is their preference) and arrange bedding around them almost compulsively. Here is the recipe I promised in the video. It is great for using up excess eggs and can be made for breakfast, brunch, or dinner! Easy Cheesy Brunch Bake 12 large eggs 1/3 c. sour cream 1 lb. pork sausage 1/4 lb. fresh mushrooms, sliced About a cup of chopped fresh spinach (if you have it on hand) 1 medium onion 2 medium tomatoes, chopped 2 cups cheddar cheese, shredded 2 cups monterey jack or mozzarella cheese, shredded Preheat oven to 400 degrees. Beat eggs and sour cream with wire whisk until well blended. Pour into greased 13" x 9" pan and bake 10 minutes or until egg mixture is softly set. Meanwhile, cook sausage ( mushrooms, spinach, and onion in large skillet until meat is cooked through, stirring occasionally. Drain. Reduce oven temp to 325. Spoon chopped tomatoes over the baked egg layer, top with the sausage mixture. Sprinkle on the cheeses. Bake an additional 30 minutes or until egg mixture is set in the center.

I may convert my own grill to an oven later. Many line their grills with foil, but my suggestion is KEEP IT BLACK that way, it will heat up alot faster, and hold heat better.

The high temperature for the day was 41 degrees, but I was able to get my Sun Oven to 325+ degrees to cook some brownies on a Saturday afternoon, even with all the snow on the ground. The recipe only called for 55 minutes, but I had to run an errand in the middle so they ended up cooking for 85 minutes, but they did not burn. Check out the video to see that it really worked.

Over a period of use, we don't notice that sometimes, a very thin coating of dust and pollen build up on the reflector and window. You would be amazed how dirty they get since they are outside. Always check the reflector and window by very GENTLY gliding your finger across both to see how much has built up. Use a soft dry or very lightly dampened cloth to gently clean the reflector and window. This will have to be done more often during high periods of pollen in spring and summer. Fall and winter its not an issue, though you can still get a film in the winter if you live where there are wood stoves cranking out smoke nearby. The cleaner you keep these two items, the higher your temps will be.

So many don't realize just how important it is to be careful around reflectors when solar cooking, especially if they are going to use parabolics or ovens with more than one reflector. Retina damage can happen if one doesn't learn to keep their sunglasses on and learn how to approach their ovens. Anytime you use a solar oven with many reflectors or curved ones, PLEASE learn to keep your sunglasses on, and approach the oven from the side or back, and also please teach children to NOT STARE into the focal point. Kids are very fascinated by solar ovens, and they must be taught to treat solar ovens with the same respect as the kitchen oven. Your eyesight is important, protect it!

I have seen websites where people cooked complete meals on their dashboards inside a vehicle. Some used aluminum foil packets and clear glass casseroles with lids. I decided to try this for myself, but using a rack for hot air to circulate underneath the food. On the rack I set a black cookie sheet to absorb more heat then put my black cooking vessel on that, in the middle so the sun would be hitting the cookie sheet all around and radiating heat to the vessel on all sides. I made sure I didn't get it too close to the window since the black pans would get intensely hot, didn't want to crack the windshield. The car had been sitting in the sun for 4 hours, it was well heated, but clouds came over and once it cleared up, it continued to heat up. I kept the pan set up on the dash all that time before I put the egg in, so it was well heated up. I put the egg in, came out 30 min and it was indeed cooking! This video is the first of two in how it turned out.

Because clouds kept coming over I decided to let this cook a total of 2 hours, 1 1/2 of it was direct sunlight, the other, wasted clouds, lol. But, as you can see, IT COOKED! I ate it with bacon bits and very pleased with the result. The next time I plan on putting the pan inside a turkey roasting bag to create an oven environment like I would with a panel cooker, and I am sure, I will be able to cook it quicker. This would be perfect for especially the homeless who live in their vehicles who need hot food, drink and water.
