Ingredients: 4 boneless, skinless chicken breasts; 8 plum tomatoes sliced 1/2 inch thick; 1 pkg frozen asparagus spears; 1/2 cup pesto; 2 tbsp mayonnaise Heat ovebn to 450 degrees, place 1 chicken breast on a sheet of heavy duty foil, repeat with other breasts. Divide tomatoes and asparagus over chicken. Combine pesto and mayo, divide this mix over 4 breasts. Fold foil over chicken and seal edges. Bake 20 to 30 minutes or until done.

Yields: 6 servings Ingredients: 1 (10¾ oz.) can cream of mushroom soup 1 ¾ cups water, divided 1 (6oz.) pkg. stuffing mix for chicken 6 boneless chicken breasts 4 slices deli ham, sliced thin 1 (8oz.) pkg. sliced mushrooms 1 ½ cups frozen peas Preparation Directions: ~ Preheat oven to 400 degrees. Mix soup and ¼ cup of water; set aside. Combine stuffing mix and remaining 1 ½ cups water; spoon evenly onto center of 6 large sheets of heavy duty foil. Top each with 1 chicken breast. Cover evenly with ham, mushrooms, peas, and soup mixture. ~ Fold foil into packets leaving room for heat circulation. Place packets in a single layer on a baking pan. ~ Bake 30 to 35 minutes or until chicken is cooked through. Remove from oven and let stand for 5 minutes. ~Place one packet on each of 6 plates, cut and fold back foil for an elegant presentation

Greetings! In preparation for my weekly The Holiday's are Coming craft upload. I needed some microwave popcorn packets. I went ahead and bought some even though we don't really eat them that often. But I got to thinking and wondering if you could make popcorn in the microwave without having to buy those icky, oily, fake packets. So here, Rick and I experiment with great success and make popcorn in the microwave with nothing more than a paper lunch sack and a 1/4 of organic popcorn kernels! You can make these up ahead of time and have them ready for your kids for after school snacks or you can simply toss them together whenever the craving for fresh popped corn hits you!
