Greetings! Yesterday I had taken out some chicken breasts for dinner. We did not use them so I have to cook them tonight. I originally thought I would make barbeque chicken on the grill BUT it rained and then I wasn't feeling that so what to do? Stood in front of the fridge for a while to see what could be made and this is what I came up with. Here is what you will need to make this recipe: 2 pounds of boneless skinless chicken breast, pounded thin and or made into cutlets 1 tablespoon veggie oil 1 cup Apricot Jam 1 Cup orange Marmalade 1/2 Cup Slice onion 1/2 Cup diced sweet peppers or throw in a hot one for fun! 1 tablespoon white wine vinegar 2 tablespoons dijon mustard Salt and pepper to taste In a large heavy bottom skillet heat veggie oil and brown the chicken breasts until they have a nice color to them. don't crowd the pan, do the meat in batches if you need to so they actually will brown and not steam. Set cooked meat aside while you make the sauce. Reduce heat slightly and add onions and peppers. Cook until softened but not mushy. Add in the white wine vinegar and stir to get all the brown bits or "fond" off the bottom of the pan. Add in the apricot jam and orange marmalade and stir to combine, add in the dijon mustard and stir well. Add the chicken back to the pan, coating well in the sauce. Cover and simmer over medium heat for about 10 minutes just to get everything acquainted. Serve over prepared rice with a nice veggie of your choice and you have a ...
