250g baby octopus (fresh or frozen) 75g macadamia nuts (crushed and whole unsalted) 150 ml of trident sweet chilli sauce Tblsp of butter 30 ml sweet white wine (moselle) 200 ml olive oil method Heat grill plate or bbq on full... place octopus on the plate and 1/2 amount of oil and cook, continually turning and basting with oil. once the octopus has shrunk & curled up, remove from hot plate and let cool. when at room temperature place in sealed container and refrigerate for 12 to 24 hours. once refrigerated, repeat the first cooking process..... until you can cut the octopus with a spatula without there being any resistance, this means they are ready. for the sauce.... place butter and macadamia nuts in a heated pot and cook until nuts start to colour, add the sweet chilli and wine, heat for a further 2 minutes. once mixture starts to simmer add octopus and stir through sauce, serve with freshly squeezed orange and lemon.

Takoyaki = Japanese octopus ball (tako = octopus) It's very popular in Japan as often appears in Japanese dramas. To make takoyaki, you need a special takoyaki grill pan (it consists of many hold to make them in ball shape). CLICK HERE TO SEE A PAN! tinyurl.com Here are the ingredients. Try it! Ingredients: 1 2/3 cup flour 2 1/2 cup dashi soup 2 eggs 1/2 lb. boiled octopus, cut into bite-size pieces 1/4 cup chopped green onion 1/4 cup dried sakura ebi (red shrimp) 1/4 cup chopped pickled red ginger For toppings: Fried bonito flakes Aonori (green dried seaweed) Takoyaki sauce (u can buy from a supermarket) Mayonnaise What to do: Mix the flour, the dashi soup, and the eggs in a bowl to make batter. The thickness of the batter should be like that of pottage soup. Coat the inside of cups on the takoyaki grill pan with oil. Pour batter into each cups until they are all full. Put octopus, red ginger, and green onion in each hole. You can decide how much depending on your taste. Grill the takoyaki balls and keep turning them with a pick to make sure they don't stick and so they cook evenly. When takoyaki become rounds and brown, remove them from the pan and place in a plate. Top with sauce and mayonnaise and sprinkle bonito flakes and aonori on top. ITADAKIMASU!
