I definitely surprised myself with how flavorful and delicious this recipe turned out! Not bad for coming up with the ingredients on a night shift. I honestly do eat other meat beside turkey but when it is just you you are cooking for and you bought a container of ground turkey, well it goes a long way! Usually with my recipes you can omit a few things here and there and it will still turn our great but with this one, I think everything has to be in place to create that real sweet and savory flavor. Although you could probably switch the kale for spinach and omit the black eyed peas and it would still be great. This is a recipe for Vegetable Lasagna. Peel and grate 3 medium carrots, cut 1 green pepper and 1 red pepper into strips to make 1 cup each, Cook 2 packages spinach to make 2 1/2 cups worth, mix these vegetables together with 3/4 cup jarred Pesto and 1 large can diced tomatoes and 1/4 tsp. salt. In separate bowl mix 1 tub part-skim Ricotta cheese with 1 egg and 3tbls. dried parsley and 1/2 cup Parmesan cheese and refrigerate for 20 min. while preparing white sauce of 3 tbls. margarine , 1 large clove of garlic, melt the margarine and soften garlic in it, then add 3 tbls. flour to make a paste, remove from heat and add 2-3 cups skim milk and stir into margarine and garlic paste. Return to med. heat and bring to a boil, stirring constantly so as not to burn the milk. Continue to boil for 1 minute then remove from heat. Start to layer your lasagna pan with lasagna strips, place 1/2 of vegetable mixture on that layer, place another layer of lasagna strips on that, then spread ricotta mixture on that, another layer of lasagna strips and then remainder of vegetable mixture, sprinkle with 1/2 of mozzarella, then another layer of lasagna strips and then white sauce on top of that, top everything with remainder of mozzarella and sprinkle some Parmesan cheese then bake in 350 degree oven for 35-40 minutes. Serve with your favorite crusty bread!

Sweet potatoes have fewer calories and more fiber than white potatoes.
