Try not to overcook the vegetables. 2. Try not to use too much potato puree. You should aim for a slightly thick sauce. Bear in mind that the sauce thickens more when cool. Questions: Can I use flour as thickener? The potato puree is much better because adds a nice flavour to the sauce.
