I have a standing date night with my wife every Tuesday. Sometimes we'll eat out, sometimes we'll catch a movie and sometimes we'll cook at home. When it's my turn, I always like to make something special -- but because date night is mid-week, whatever I cook can't take too long. One of my favorite ingredients is mussels; they're elegant, require very little prep and the best way to eat them is steamed, which doesn't take a lot of effort. My favorite mussel dish is Moules Marinière. It's a classic dish with only five ingredients so prep and cook won't take more than 30 minutes. This basic Moules Marinière recipe is also very versatile. Add fries to get Moules Frites (mussels and fries), or toss the mussels and mussel water with pasta to make a great one-dish meal. It's a simple yet sophisticated dish that's perfect for a weeknight date. When buying the mussels, make sure the shells are undamaged, tightly closed and don't stink. Pull off the beard that comes out of the shell; if it doesn't come loose, use a knife. Using a scouring pad or a stiff brush, scrub the mussels vigorously one by one, perhaps under running water. With the blade of a knife, scrape off any barnacles attached to the shell. Once cleaned, wash the mussels under running water. Now the mussels are ready to be cooked; to open the mussels, put them in a pot and cover with a lid. Once opened, they're ready to be cooked as you like!

Add the mussels and cook until they all open. Strain the mussels and set aside while you prepare sauce. Dice onion, bell pepper and garlic and place in a skillet. Cook until onions are clear then add tomatoes, paste and oregano. Cook for 30 minutes on a medium heat until all flavors begin to blend together. Once sauce is prepared, pour over mussels and serve.
