Clean mushrooms with a damp cloth and take the stems out. Place mushroom caps, open side up, on a greased cookie sheet. Prepare vegetables to sautee. Chop onion, mince garlic, and chop mushroom stems. Heat vegan butter in a skillet over high heat until melted. Add in the onion and mushrooms, and when almost soft, add in the minced garlic. Season vegetables with salt, pepper, and oregano. Once onions are translucent, slowly stir in vegetable stock to de glaze the pan. Continue to cook until liquid is reduced to about half of the original amount. Remove the vegetables from heat and stir in vegan cream cheese until fully incorporated. Next stir in ½ cup nutritional yeast and ¼ cup Panko Breading. s with the vegan cream cheese. Use the remaining nutritional yeast and panko breading to top the mushrooms. Shepherd's Pie mushrooms: Stuffed with ground chuck, mashed potatoes, 5 cheeses, shallots and fire roasted peppers. These are topped with regular Pillsbury biscuit dough. Brown and drain the ground chuck before mixing with the shallots, mashed potatoes and cheese. Do not bake or you will get soggy mushrooms. If you have an electric stove, use the top coils. If you have a gas stove, use broiler. After mushrooms start to get brown on top, cut oven off and let the residual heat cook the filling a bit more (about 4 mins.). If you have a gas stove, move mushrooms to oven section to further cook filling with residual heat. Add garlic, salt, pepper, paprika and and other spices to your liking. I topped these with a little smoked paprika before putting the dough on top. It looks like a whole lot in the video but its just a few sprinkles. The cheap digital camera just made it look really "red".

We tried a new batter for the morels, Kikkoman Panko Japanese style bread crumbs. We coated the morels in flour, then dipped them in beaten egg, and finally rolled the morels in the Panko bread crumbs and fried them in butter and canola oil. Needless to say, the morels tasted great. Although, I prefer my morels sauteed with just a light coating of flour and corn meal and nothing else. Sometimes I will put a bit of garlic or onion powder on the morels as well, fried in leftover bacon grease they are excellent. :) I also included a little tip for keeping ramps or wild leeks fresh, it's the same thing we do for green onions and shallots.
