Soak 1 cup mung bean sprouts for 12 hours. Rinse every 8 hours for 1-5 days, depending on how long you want the sprouts. Put a weight on top between rinses. On the 3rd (or last) day, soak the sprouts again for 10-20 minutes, then let them dry completely. Skip the last rinse to generate heat. Herbal Party Sprouts: Mix the sprouts with 1 Tablespoon each of : oregano, basil, thyme, garlic, rosemary, marjoram, onion plus 1/2 tsp. olive oil or sesame oil. mung Bean Salad: Chop up your choice of vegetables: cucumbers, carrots, peppers, cabbage, snow peas, mushrooms, pineapple. Toss with sprouts Ginger Dressing: 3 T. tahini or nut butter, 2 T. Bragg's Amino Acids or Nama Shoyu, juice of 1 lemon, 1/4 c. apple cider vinegar, 2 garlic cloves, 1/4 tsp. green curry paste, 1 tsp. honey, 1/4 c. water. Blend and pour over salad. Chill!

An arrangement of fresh spinach, cucumber and radish slices, chick peas, and sliced ripe olives is covered with crisp, fresh mung bean sprouts. With a little oil-free Balsamic Raspberry Vinaigrette Salad Dressing drizzled over the top, this salad is nutritious and is perfect for those of your who are watching your calories! It is still wonderful, even if you are not dieting! Ingredients: I bag fresh spinach (These spinach leaves are pre-washed, but you may want to wash and dry the spinach before assembling your salad.) 1 cucumber, sliced 1 bunch radishes, sliced 15-oz. can chick peas (garbanzo beans), drained 6.5-oz. can sliced ripe olives, drained 1 quart fresh mung bean sprouts On a salad plate, assemble your salad as follows: Place a layer of spinach leaves on the bottom of the salad plate. Arrange cucumber slices, symmetrically over the spinach, as desired. Next, arrange radish slices on top of cucumber slices, as desired. Now, place chick peas (garbanzo beans) over radish slices, as desired. Next, place ripe olive slices on top of chick peas, as desired. Top the whole salad off with fresh mung bean sprouts, making a lacy design. Serve with Balsamic Raspberry Vinaigrette Salad Dressing for a gorgeous, healthy salad that can be used as a full meal! I was a little hesitant because it's vegetable and he doesn't like vegetable that much. And if he does not like it, then it means I will have to eat this ginisang mungo by myself. But luckily after smelling the aroma from the sauteed pork and shrimp, he finally said the magic words, "it smells good," which means, I am don't have to worry about this food being thrown away. This ginisang mungo is just a very ordinary food in the Philippines. I guess everybody knows how to cook this. We just filmed the cooking of ginisang mungo for the sake of those Non-Filipino viewers who wants to try Pinoy recipes. And I have also shared a little secret that can make the taste of this Pinoy recipe even better (although not very healthy) which is the addition of the fried pork skin or what we call chicharon. My mother does not even add chicharon to her ginisang mungo. I just got that secret from my aunt who lives in Pasig City. Thanks Tita Myrna! And I tell you what, her ginisang mungo won't last very long on the table. And she would put probably 3 times the bag of pork skin than what I have put on mine on the video. And also, the quality of pork skin really does affect the flavor of the ginisang mungo. When I was still living with them, I would eat ginisang mungo just because of the pork skin. It's that good.
