Chocolate mousse (20cm) **Requested by TreezieS and Liliporsa** Ingredients 50 - 60g butter 150g digestive biscuits (crushed into fine crumbs) 2 egg yolks 200g chocolate 500ml fresh cream 15g gelatin crystals 4 Tbsp cold water Method 1) Melt butter and combine with crushed biscuits 2) Press the biscuit mixture into the tin evenly (can use your hands) and leave it in the fridge 3) Whisk the cream to a creamy texture until you can see the swirling pattern (low then medium speed) 4) Beat egg yolks to pale yellow and creamy texture (variation: 50g sugar) 5) Combine cream and egg yolks (low speed) 6) Heat up bowl and melt chocolate (low heat) 7) MIx cream mixture with chocolate (FAST!) 8) Sprinkle gelatin in cold water for 5 to 10mi, heat up slightly to dissolve completely 9) Add gelatin to choco mixture and combine 10) Pour into tin and wait for a while for it to set 11) Decorate it It's really yummy and it is a great dessert for family and friends.
