This recipe was in a cook book my hubby gave me at Christmas, it is called "Italian cooking" Not sure if there is anything Italian about this though, lol.
The bacon flavour in this one makes its way throughout the entire meatloaf, meat and mac and cheese. It is a lot of trouble to make it and the results are good but not spectacular. I also found it difficult to get a nice slice that didn't fall apart when getting it onto the plate.
This would have been better if only a couple of strips of bacon would have been layered on top of the meatloaf instead of all around it. The meat itself was very tasty.
2 tbsp butter
1 onion chopped finely
1 small red bell pepper chopped
1 garlic clove chopped
1 lb of ground beef
1/2 cup soft white breadcrumbs
1/2 tsp cayenne pepper
1 tbsp lemon juice
1/2 tsp lemon rind
2 tbsp chopped fresh parsley (I used 1 tbsp dried)
1 cup dried pasta (I used elbow macaroni)
Cheese sauce (see below for recipe)
1. melt butter in a pan over a medium heat and fry the onion and pepper for about 3 minutes, until the onion is translucent. Stir in the garlic and cook for a further 1 minute.
2. Put the meat into a large bowl and add the fried vegetables and stir in the bread crumbs, cayenne pepper and lemon juice and rind and parsley. Mix it together well an season with salt and pepper to taste.
3. Cook the pasta and prepare the cheese sauce (recipe below)
4. Grease a 2 lb loaf pan and arrange the bacon slices to line the base and the sides of the pan
5. Spoon in half of the meat mixture, level the surface and cover it with the pasta. Spoon in the remaining meat mixture, level the top and cover the pan with foil (I didn't cover the pan)
6. Cook at 350F in the oven for 1 hour or until the internal temperature is at least 160F. Pour off any excess fat
**(any excess fat??? are you kidding me? there was a lot of excess fat in this, you may want to carefully pour it off about halfway through the cooking time)
Turn it out onto a serving plate and slice.
(I tried to scoop this out without inverting it and the slices fell apart easily. Try the inverting thing, it may slice better)
My cheese sauce recipe:
Place about 1.5 tbsp of butter in a saucepan and heat over medium heat until melted. Add 1 tbsp of flour and stir over the heat until bubbly. Add one cup of milk and stir until the flour/butter is dissolved. Continue to cook over medium heat stirring occasionally until thickened and bubbly. Add 1 1/2 to 2 cups of shredded cheddar cheese (or 1 cup Cheez Whiz or cubed Velveeta cheese)
and stir until melted and combined. Add cooked pasta to sauce and stir to coat.

Rinse and cool. Toss with parsley. ~ Place half of the pasta mixture in a 4 qt. glass bowl; top with half of each of tomatoes, beef, and onions. Repeat layers. Pour dressing evenly over salad. ~ Cover and chill at least 2 hours or overnight. Top with cheese before serving.

Taco layered Dip 1 can refried beans 1 cup Guacamole (we have a video on making guacamole) 1 cup sour cream 1 cup spicy salsa 1 cup grated cheddar cheese 1/2 cup sliced black olives 3 TBs. chopped jalopeno pepper Serve with your favorite Taco Chips 10 inch pie pan or a plate 1. Using a rubber spattuala, spread the refried beans over the bottom of the plate. 2. Spread the guacamole on top of the beans. 3. Stir the sour cream until smooth and then spread that over the guacamole. 4. Spoon the salsa on the sour cream before spreading it out. Doing it that way helps to keep the sour cream and salsa from mixing together. 5. Sprinkle the salsa with the cheese. 6. Decorate with Sliced black olives and Jalapeno peppers
