How to Make Fritters (indian Pakoras) - as part of the expert series by GeoBeats. I am going to show you how to make pakoras. Pakoras are fritters made with vegetables such as potatoes, onions, cauliflower, zucchini, and a paste of chickpea flour. So, this is chickpea flour. I have turned this chickpea flour into a smooth paste with water. It is a fairly thick paste and it is all smooth, there are no lumps. If you wish, you can strain it through a sieve to make it nice and smooth. I am now going to add some vegetables. Well, I am going to add a little bit of spices to my chickpea flour paste first. So, a little bit of cayenne pepper, a little bit of tumeric and a little bit of whole cumin seeds. I am going to add a touch of salt. Just going to mix it all up until it is nice and smooth. And now we are going to add our vegetables to this spiced up chickpea paste. So, I have some potatoes I am going to add, some onions. Just going to mix it all up until it is well-coated with the paste. Now we are going to drop this into hot oil which is over medium heat. So, we are going to drop it by the spoonful to make fritters. I am just going to loosen it. Oh, beautiful. I am just going to flip them. The reason they are on medium heat is because the vegetables are raw. So I want to make sure that the fritters get completely cooked and the vegetables are softened. So this would take about three to four minutes in total. I think the number one myth associated with indian cuisine is that it is hot and spicy. People confuse hot with spicy. Spicy does not necessarily mean hot. So if you love a curry, but you do not want too much heat to it -- hold on to all the other spices that go into the making of a curry. Just cut back on the cayenne pepper or the black pepper. The second myth that I think a lot of people think about when they think about indian food is that all indian food is curry. Now, all indian food is not necessarily curry. A curry to an indian refers to any meat or vegetable that is cooked in a spicy sauce. We have a whole range of dishes that do not have a sauce; that are not curried. There is a whole new world out there to indian cuisine that is not just curry. The third myth that I think a lot of people have about indian food is that it is greasy and hard to digest. Using Fenugreek in Cooking - as part of the expert series by GeoBeats. Fenugreek is used in three different ways in curries. It is a really important ingredient in South indian cooking, and it also adds its very distinctive aroma to most curry powders and curry pastes. The fenugreek seeds have all their flavor locked into the seeds, so that needs to be released by frying them in hot oil first. Because they tend to be a little bit bitter, they have to be used sparingly. So, a small amount of fenugreek goes a long way in flavoring a curry. I also like to use fenugreek as dried leaves. I find the leaves are really mellow, really aromatic, and they just add a wonderful curry aroma to any curry they are added to. And finally, we use them fresh, in the fresh leaf form. These tend to be slightly bitter and they need to be sauteed over low heat for a long period of time to get rid of some of the bitterness, but they taste really delicious with vegetables such as potatoes and onions. Or, when they are cooked with chicken or lamb, they are absolutely delicious. Fenugreek, in all its forms, adds a wonderful, subtle, curry aroma to any curry.

Cumin seed is a really important spice that is especially used in North indian cooking, and we use cumin seeds in three different ways in most curries. First, is the whole seed, which has to be fried up in hot oil because all the flavor is locked inside the seed. In order to release the flavor and the aroma from the seed, you need to either toast it or fry it in oil to get the full effect of the spice. The other way we use cumin is ground cumin. Ground cumin is just whole seeds that have been ground up. They are used in curries to add that distinctive cumin flavor to most of our sauces. Now, the third way we use cumin is we toast the whole seeds in a nonstick frying pan over medium heat for about two to three minutes. As soon as the seeds turn a shade or two darker, cool them and then either crush them with a rolling pin or grind them up in a spice grinder and you have toasted cumin seeds. So, it is the same spice, but because of the three different ways of using them, you get a whole new flavor every single time. And that adds layers and dimensions to the flavor in a curry.
