Shrouded in mystery, I had no idea where I was being taken by my children on 'Mother's Day', so I waited in joyful anticipation at 7.am on my doorstep for their arrival. Less than two hours later, we reached the enchanting village of Gharb in Gozo, where our host, the indomitable Victor Galea, chairperson of the Ager Foundation, emerged full of his usual enthusiasm, from his idyllic retreat in a sun-splashed street, and introduced us to his charming wife Miriam who gave us a true Gozitan welcome. I did not yet know that a memorable day on a neighbouring farm was to be my experience. A very homely Grezzja, sweet daughter Guza and avuncular dad Karmnu stood at the entrance of their farmhouse ready to receive us. We were joined by two young couples from Malta and a beautiful lady lawyer from Russia. Fortified by steaming mugs of coffee flavoured with tacci (cloves), we made our way to the farm around the corner. Here we found sheep, goats and rabbits and here also, we were introduced to the art of milking - everyone trying his hand - and treated to a sheep-shearing session. The biggest rabbit I have ever seen ate his dinner unperturbed by prying eyes while a kindle of kittens would their way around our feet. And so to lunch to Grezzja's cosy kitchen who, before we sat down to table, prepared a big container with the milk which Karmnu had brought back and into which she put coagulating powder for the production of cheese which took exactly one hour to settle. Greetings! Here I am showing you how to make a wonderful chocolate almond biscotti that you can share with your friends. How many times have you seen biscotti in the specialty stores or even the supermarket or specialty bakery and then looked at the price? I know from personal experience that they can range anywhere from $1 each to $10.00 for a package of 6! WHY? When you can make your own. Now, who among us does not have at least one brownie mix in their pantry? I would venture to guess most of us do. The best part of this recipe is that it starts with a brownie mix and then a few staple ingredients are added to make a wonderful product. Give this along with a mug filled with Chai Tea, Spice Tea or Hot Cocoa Mix from previous videos and you have a gift that will not soon be forgotten! I hope you try this and I hope you enjoy it. As always, Happy Gifting!

Greetings! Let's do one more personal care item this week and then we will move on to some food gifts and papercrafting ideas. Aromatherapy bath tea is simple and luxurious. Fill an extra large tea bag with dried herbs of your choice and some epsom salts and baking soda, iron them shut and you have made little pillows of relaxing heaven. These are so easy and you can make a ton of them for very little cost. Bundle them up in bunches of 4 or 6, tie them together with a pretty ribbon, put them in a cellophane bag add a nice tag with instructions on how to use and you can have your gift giving done in no time. Homemade, simple and it looks like you went to a lot of trouble. I promise I won't tell! (wink) So I hope you will consider giving these a try. Happy holidays! A week is left until the big day and boy am I ready (in some ways) My daughter was supposed to have a fund raiser at her school tonight, but they cancelled it due to the weather, so I had purchased all the ingredients to make Blondies. My family was excited that they would have some for dessert, and I couldn't disappoint, so here is my recipe for these delicious, chewy bars. These would make a great gift idea and everyone will love them. I hope you try them and I hope you enjoy them. As always Happy Eating!

Today I am going to show you an amazing 5 ingredient shortbread recipe. This makes two nine inch rounds of incredible, buttery, flaky and delicious shortbread. You could just leave it plain but why? When you can drizzle this wonderful cookie with two kinds of chocolate and sprinkle with nuts, what could be better? Here is what you will need to make this recipe: 2 sticks of softened butter 1 cup confectioners (Powdered) sugar 1 teaspoon of good vanilla 1/4 teaspoon of almond extract (optional) 2 cups flour 1/2 cup semi sweet chocolate chips 1/2 cup of white chocolate chips slivered almonds In the bowl of your mixer cream butter, sugar and extracts until smooth. Add flour until blended. If the mixture is dry, you may add between 1 teaspoon and 1 tablespoon of water until the mixture comes together in a smooth mass, but be careful, if you add too much moisture, your shortbread will not bake correctly and you will just end up with a pan full of goo. YUCK! Turn our the dough onto a board and form into an even mass. Divide into two pieces. Place each piece into a greased 9 inch round pan and press with your fingers or a small roller until even and smooth. You will now need to "dock" or pierce the dough thoroughly. Take a docking tool or a fork and pierce the dough all over, if you think you have too many, you don't! Bake in a 325 degree oven for up to 35 minutes. If using a dark pan, decrease by 5 minutes. Check at 25 minutes. You don't want them to be too brown. Remove from ...

Greetings! Today I am going to show you my favorite recipe for fudge. Marshmallow fudge, this stuff is great and you will love it too! 5 simple ingredients that you may already have on hand and a recipe that is a throwback to the 70s but oh is it good. It is also extremely easy and a good recipe for the new cook. You will certainly impress your friends when you give them a box full of this delicousness! I started out by telling you to us a 9x13 pan, but I was wrong. Only use that if you double the recipe. What you need to make this is: 1 14 ounce can condensed milk 3 cups chocolate chips 1 1/2 teaspoons vanilla extract dash of salt 3 cups mini marshmallows Place condensed milk and chocolate chips in a saucepan and melt over medium heat, stirring constantly, when everything is melted and the mixture begins to thicken, add the marshmallows and kind of fold them in so that they don't melt into the fudge. You want them whole so that they are studded into the fudge in the final products. Pour into an 8 inch baking pan lined with aluminum foil and place in refrigerator for at least 30 minutes to an hour. Remove fudge from pan by lifting the foil and then you can cut into pieces. I like to return them to the pan at this point and keep it in the fridge overnight to set up completely. If you like, add some chopped nuts to the mixture before placing in the pan and you will have rocky road fudge. Give this one a try, I know you will just love it! As always, Happy Gifting!

Greetings! Tonight, more of a demo "how to" than a recipe, showing you all how easy it is to make your own solid pack pumpkin. This is the easiest thing you will ever do! Granted it takes a bit more work than opening a can, but the results are superior. When you purchase canned solid pack pumpkin, you may not be getting what you think! I have read some articles that indicate that what is in that can may be some pumpkin but a greater majority of the time it is butternut squash, because the squash grow more quickly and produce more abundantly. So this way we know that when we make a pumpkin pie, that is exactly what we are getting! In a day or two I will use this pumpkin in a recipe fit for gift giving! Look for that one. AND! Don't forget to use those pumpkin seeds either! They are packed with fiber and nutrients as well as minerals, vitamins, fatty acids and lots of other good nutrition. Look up the health benefits of pumpkin and you will be amazed why we are not eating pounds of this every year! So give this a try and as always, Happy Eating and Happy Gifting!

Greetings and Happy holidays! This will begin my holiday 2009 series. I wanted to try to give you some ideas that are inexpensive, delicious and easy. I also wanted to focus on what the holidays are all about. In our current economic situation, whatever yours may be, we are always able to share of ourselves with a gift that is made by our hands, be it , from the kitchen, sewing machine or workshop. Even in this age of electronic everything, we can put pen to paper and give a gift of the written word with our friends and loved ones. Today I am happy to share with you my cream cheese brownie recipe that I have been making for well over 20 years. Here is what you will need: 1 box of your favorite brownie mix, prepared according the the package directions to your preference. 1 8 ounce brick of cream cheese, softened 2 Tablespoons of butter, softened 1 Egg 1 can of Sweetened Condensed Milk (Not Evaporated Milk) 1 Tablespoon of Corn Starch (not corn meal) 1 Teaspoon of Vanilla Prepare your brownie mix and pour into a prepared 9 x 13 baking pan. With a mixer, blend together cream cheese and butter until combined, add egg and incorporate fully. Add the condensed milk and mix again. Add corn starch and vanilla and beat until the mixture is smooth and well blended. Pour the cream cheese mixture over the brownie batter and gently even out in pan with a rubber spatula. Taking a skewer or butter knife, run through the batter up and down then begin to swirl, do not swirl too much or ...

Greetings! I want to make some cake pops so I decided to make my Mom's buttercream icing. I wanted an icing that was a bit thicker and suitable for piping because the cake pops need a hearty binder. This buttercream is my Mom's recipe. For those of you who may not have heard me speak of my mom, she used to be a pastry chef while I was growing up. That is how I learned to cook. At one time, we both worked in a bakery together. She is still way better than I am at the decorating end of things but I am still learning. I am impatient, that does not mix well with learning to pipe flowers. In all this recipe is very simple: 1 cup crisco 1/2 cup butter 2 pound bag powdered sugar 2 teaspoons vanilla 1 teaspoon butter flavor (or any flavor extract) Up to 4 tablespoons water depending on the weather on that day. Whip crisco and butter together for 10 minutes. Add in extracts and blend well. Add in powdered sugar gradually so you don't get a sugar snowstorm in your kitchen. Beat for a few minutes and determine if you need to add some water. Beat for 10 minutes. Now its ready to use. I hope you try this and I hope you enjoy it. As always, happy Eating!

Greetings! Fall is in the air and the mornings are crisp and the evenings are cool and the apples are abundant! The perfect time to make some Applesauce Cake. Moist, dense and seasoned with cinnamon, nutmeg and allspice, this cake hits all the right spots. Feel free to frost this with some of that cream cheese frosting that we made recently or just top with a dusting of powdered sugar and cut into squares and let everyone grab a piece as they walk past. This is a lovely gift idea for your neighbors or your coworkers. Divide the batter between two 9 inch square or round pans or a couple or a few mini loaf pans and when they are cool, top with powdered sugar, cream cheese frosting or some lemon glaze, wrap them up in some cellophane and tie with a pretty ribbon and give! I like to give these away the day before Thanksgiving so that my friends and neighbors will have a nice little autumn nosh for breakfast to get their holiday going. It's a nice alternative to giving away dinner rolls or yeasted bread, which I have also done in the past, this is less work and appreciated just as much. One small cake or loaf is a nice gesture and says you are thinking of them. Give this one a try and add it to your holiday gift giving repertoire, As always, Happy Eating and Happy Gifting!
