Greetings! To go along with our potstickers, I decided to make some Asian chicken soup. This was the perfect accompaniment to the dumplings and since I was already making those, wontons just made sense. At the end of the dumplings and wontons I ended up having a bit of the meat mixture leftover so I rolled it into tiny meatballs and tossed it in the simmering broth along with the wonton to cook. This soup was amazing! Delicious, light and satisfying. This served the four of us for dinner and three of us for lunches in the following days. This meal was delicious and fairly easy to put together. Yes, it requires a bit of time but you make the soup while you are putting together the wonton and dumplings and in the end I think I spent less than an hour making this meal. It may sound a bit strange to have bacon for dessert, but trust me IT WORKS! The salty smokey flavor of the bacon brings out the sweetness in the bananas and the rum sauce. This dish is super fun on the palate. Its got crunchy and soft, hot and cold, sweet and salty... you're gonna love it! I hope you guys dig my recipe for Bacon Fried Bananas and Candied Bacon with a Brown Sugar Maple Rum Sauce. Ingredients: 2 Bananas, sliced in half lengthwise 8 strips thick cut bacon ½ tablespoon ground cinnamon 2 tablespoon granulated sugar 2 tablespoons maple syrup 1 cup dark rum 2/3 cup dark brown sugar 4 scoops vanilla ice cream Instructions: Action: 1. In a large sauté pan add the sugar and rum over med-high heat and reduce to about 1/4 of a cup, about 10-15 minutes (or until it gets thick like maple syrup). 2. In a large sauté pan render the bacon over medium heat (About 10 minutes). Mix the cinnamon and sugar in a small bowl. Once the bacon is crispy, place on a paper towel and dust with the cinnamon and sugar immediately. Reserve the bacon fat for the bananas. 3. Increase heat on the bacon pan to high, add the bananas, cut side down and sauté until they get golden brown, then flip for the same result on the other side, about 1 to 1 ½ minutes per side. Greetings! What can I make with what I have in the house? What can I do to use up some of the stock I have in my freezer? Quick inventory reveals that I have a bag of frozen chicken breasts some lima beans, okra, tomatoes, a link of smoked sausage that needs eating, a few potatoes in the larder and then it dawns on me, I have the perfect makings for Brunswick Stew! This is a classic dish that is found in the South East mostly from Virginia down through Georgia. Kind of a regional wonderment. We have restaurants in the area that are famous for the brew. You can even find it in a can at the grocery store. Originally calling for small game such as squirrel or rabbit, but today more traditionally made with chicken, ham, salt pork or sausage, this stew can contain any type of meat you have, whatever you choose, beef, chicken, pork, ham, sausage, you get the picture. 1 pound fava beans (weighed while in pods), or about 1/5 cups of shelled favas
1 bulb green garlic, minced
1 tbsp fresh ginger, minced
1/4 pound cooked shrimp
2 tbsp yogurt
1/4 tsp sriracha sauce
1/4 tsp garam masala
zest of 1 lemon, plus the lemon
2 sprigs plus extra for stuffing, fresh mint
1 pkg square wonton wrappers
Small bowl of water
Butter
salt and pepper
1) In a big pot, boil lots and lots of water. Set up your steamer basket if you have one. Meanwhile, heat 2 tsp olive oil in skillet. Add garlic, ginger and fava beans. Saute gently about 5 minutes.
2) Throw shrimp in your food processor. Pulse quickly until coarsely chopped. Remove from processor bowl.
3) Add fava bean mixture to the empty processor bowl. Add yogurt, sriracha, garam masala, lemon zest, mint, salt and pepper. Process until smooth.
4) Grab two dumpling wrappers. Spoon 1 tsp filling on one wrapper. Place a mint leaf over the filling. Dip your pastry brush or your finger into your bowl of water and run it along the edges of both wrappers. Place empty wrapper over filling, squeeze edges together, squeezing the air out as you go.
5) Either steam or boil the raviolis for about 5 minutes. If you're boiling them, turn the heat down so your water is at a gentle boil.
6) While the little pillows are either boiling or steaming, make the brown butter: heat a small skillet over medium-high heat. Add a spoonful of butter, and stand back as it splutters. Keep a careful eye on it -- it will start to turn brown, and your kitchen will smell gorgeously nutty and sweet. As soon as that happens, throw a few mint leaves in and turn the heat off. Immediately pull your pillows out of the steamer/boiling water into your serving dish. Spoon a little brown butter over them, sprinkle with salt, pepper and squeeze a little lemon juice over the top. Serve immediately!

But Paula calls this new way of cooking greens frying, instead of sautéing. I can only guess it is because of the amount of oil. But, I am excited to challenge my palate and give it a try. As the cabbage wilts, toss, and add a bit more. Once all the cabbage is in the fry, toss in the sriracha sauce, and cook for about 10 minutes. Remove from heat and serve hot. My Verdict: I really liked this watermelon ice. It was cool and refreshing, and without all the sugar, it was guilt free. The watermelon had a really green taste though. Something like what I would imagine cucumber water to taste and smell like.
