What French-trained chefs call en papillote, Greek rustic cooks know as "kleftiko" or "exohiko" -- basically baking in paper. The word kleftiko comes from the Klefts, mountain rebels who fought in the resistance against the Fascists. They had to hide their food during cooking, usually by roasting whatever meager sustenance they could find, in shallow, covered pits in the ground. Kleftiko hence offers a little poetic license, as the food is "hidden" inside the paper. Exohiko, which means outdoors in Greek, is a more subtle reference to the Klefts.Above, is a dish from the Country Cooking of greece (Chronicle Books, Fall 2012), for either goat or lamb. You'll notice it's whole on the bone, which is a slight deviation from more common recipes that usually call for baking chunks of meat in paper. Meat on the bone is just so much more flavorful. — in greece. Fesklopita is one of the most unusual Greek pies, neither savory nor sweet. It's a dish native to Tinos, Andros and a few other Cycladic islands. 1 medium onion (chopped)
2 -- 3 small tomatoes (cubed)
1 medium carrot chopped (optional)
8 oz. (227 gr.) tomato sauce
½ cup olive oil
4-5 cups water (for cooking the meat)
4-5 cups water (later -- for cooking the orzo)
500 gr. Orzo pasta (κριθαράκι)
Salt and pepper to taste
Plenty of love
DIRECTIONS:
1) Wash meat and mix it in pan with tomatoes, onion, tomato sauce and salt and pepper. Add Greek extra virgin olive oil and water. Bake it for 60 minutes at 375 until the meat feels soft and much of the water has evaporated (add water if needed). Every 15 - 20 minutes open the oven and turn the meat over, repeat.
2) Remove from the oven, and put the pasta. Add 6 cups additional boiling water and bake it for 15 to 20 more minutes. Turn of the oven, let it cool off for about 10 minutes and enjoy it.

www.foodreporters.com Pork chops with wine marinades Ingredients 4 pork chops 1 L. red wine Coriander (1 handful coriander seeds and 1handful cracked) 2 cups of vegetable broth Salt, pepper 1 cup olive oil Preparation Marinate overnight the pork chops in the wine and the coriander. In a deep pan sauté with half of the olive oil the chops from both sides. Season. Once they get a bit crispy, remove them from the pan and throw away the oil. Place them again in the pan and pour in the wine from the marinades with the broth. Add the rest of the oil. Seal the cap and let it come to a boil. Once it boils open the cap to help the wine evaporate. Cook for 20-30 minutes in medium heat. Serve them with crispy potatoes.

In ancient greece, the symposium was a drinking party (from Greek «συμποτείν» (sympotein), "to drink together"). The symposium took place at "Evmaros" which is a cultural association based in Ambelokipi, in Athens. Through archaeology and history they are recreating the ingredients and baking techniques for certain recipes, documented in archaeological findings and philosophical text.
