Come vi avevo detto, ho cominciato a proporvi le ricette di cui ho fatto solo le foto; iniziamo con i Cupcakes!! Spero vi piacciano! bacioooo *English version of the recipe* Ingredients: - 2 eggs; - 100 gr. butter; - 110 gr. sugar; - 140 gr. flour; - 30 ml of milk; - 2 teaspoons baking powder; - 1 teaspoon vanilla essence; For the butter cream: - 125 gr. powdered sugar icing; - 25 gr. butter; - 15 ml of milk; - 1 / 2 tsp vanilla essence; Preparation: Continue mixing the dry ingredients in a bowl (sugar, flour, baking powder, vanilla) and mixing the wet in another (melted butter and eggs). Then join the two compounds mix and add milk until it forms a smooth and homogeneous. In a mold for an insert muffin paper cups and fill with the mixture. Then bake the "muffins" at 180 degrees for about 12-15 minutes, we always do the toothpick test to check the cooking. Let us prepare the butter cream to decorate the cupcakes, in a mixer, mix butter, milk, sugar and vanilla until it forms a smooth cream, to which we add food coloring. Cover the muffins with butter cream and decorate as desired! Enjoy your meal!

Peanut Oil; - 50 gr. butter; - 30 gr. milk; - A pinch of salt; - A packet of vanilla; - 1 packet of yeast; Preparation: Let's start with the eggs and add sugar, then add the butter very soft (if you prefer, you can melt it a little in a saucepan or in microwave). When we combined all of butter, we add the yogurt, milk, salt, peanut oil, vanilla and flour (sifted before). When the mixture is smooth and no lumps, add the yeast. Now we pour the mixture into a plum cake pan, previously buttered and floured (or lined with parchment paper) and bake in 160 degrees for 50 minutes. Do the toothpick test and if the dough does not stick to stick, the plum cake is ready! Enjoy your meal!

Today we are, once again, celebrating the Tuscan Farmers' Food, serving you a very traditional "Pasta and Fagioli" soup. Only a few ingredients are necessary to achieve a great taste...so roll up your sleeves, arm yourself with a wooden spoon, GET COOKING! Serves: 6 Prep time: 10 minutes (plus the time to soak the beans) Cook time: 40 minutes Ingredients: 1 Lb Dark Kidney Beans 1 Lb Pork Ribs ¾ Lb of pasta (better if large, like rigatoni) 8 Cups of water 3 Cloves of Garlic 2 handfuls of Rosemary 8 Oz. Pelati Salt, Pepper, Extra Virgin Olive oil Preparation: Rinse well the beans and Soak them overnight. Bring your 8 cups of water to a boil, add the beans, stir well, and cook for about 40 minutes. Broil the pork ribs in the oven. Season them with some salt and pepper, cut them apart and lay them on a large tray and put them in the oven...you should settle for nothing less than a nice golden brown crispy skin. In a non stick pan saute' the garlic and the rosemary in about 2 tbs of Olive Oil. When the beans are cooked, take them out of the water and puree them, and then put them back into the pan; save some beans intact, it will help the look and the texture of the soup. Add the garlic and the rosemary, along with the oil you sautéed them in, the 8 Oz. of Pelati and the broiled ribs. Add salt and pepper to your likings. Today's lunch could have easily been a mid August family feast. The kitchen filled up with wonderful smell of peppers, and both Debi and I have been transported somewhere else... She felt like she was getting ready for a block party in Brooklyn. Gabriele imagined the singing of Cicadas in the Olive Fields... Just a few quick notes about today's menu: - always try to find pork sausage that are not seasoned (same applies in case you decide to go turkey) - you can use your sauce to make Bruschetta instead of Pasta. Toast some bread, spread some Italian soft cheese (Mozzarella, Stracchino, Burrata), then sprinkle the sausage sauce. Bake at 400 for about 10 min...you can broil it at the end for a final crisp. - when preparing the Peppers, always leave yourself open to new uses for them. Yes you can do the skewers, but there are many different ways you can serve them, as a Bruschetta, as a side dish...you can even chop the roasted peppers and use them to prepare a cold pasta salad. Just Get Creative!!! Roasted Peppers and Cheese Skewers. Serves 4 Prep Time 10 Cooking Time 30 Ingredients 4 peppers, medium-big size, different colors 5 cloves of garlic 10 oz of cheese cut into small cubes: Mozzarella, Machego...anything you'd like to try Extra Virgin Olive Oil Salt, Pepper Tooth picks How to Preheat the oven to 450. Serves: 4-6 Prep Time: 15-20 Cook Time: 40-50 Ingredients. 3 Tablespoons of butter (olive oil works as well) 1 ½ Cups of Butternut Squash, chopped 2 Artichokes 6 Cups of Vegetable Stock 2 Cups of Risotto Rice 1 Handful of freshly chopped Parsley Salt and Pepper Freshly grated Parmesan Cheese, to serve. How to prepare it. Break off the Artichoke stems and discard the outer coarse leaves of the chokes, then cut into thin wedges. Bring your Vegetable Stock to a boil. Melt the butter in a large non-stick pan; add the Squash and cook, stirring occasionally, for about 5 minutes. Add a half glass of water to help the sauce, and use a wooden spoon to mash the Squash. Add the Artichokes and on a medium flame cook for about 15 minutes. Stir in the Rice and season with salt and pepper. Add a ladleful of the hot stock and cook, stirring, until it has been absorbed. Continue adding the broth, a ladle at the time, and stirring until each addition has been absorbed. This will take about 20 minutes (depending on the kind of risotto). When the rice is tender serve it on the plates and sprinkle the Parsley and some Parmesan cheese on top. Notes: Never add too much broth at one time, and always make sure the broth is hot, otherwise it will stop the cooking process. If you already finished the broth and the rice is not yet done cooking, heat up a couple of cups of water, and ladle by ladle bring your dish to the end. It is a little exercise, but risottos usually benefit from a little burning ...
