Mashed potatoes must be stiff or will collapse. Make them dryer (let them dry out) or use a little flour. INGREDIENTS: Leftover ground meat stew (see Picadillo Video) mashed potatoes 2 eggs, beaten with water to make an egg wash bread crumbs or flour METHOD: Cup a small amount of mashed potatoes in your hand, make a well, fill with one spoonful of ground beef filling. Form a ball. Roll into the egg wash bowl then into the dried breadcrumbs bowl. Lower carefully into a deep fryer at 375 degrees F filled with canola oil or peanut oil. Since everything else is already cooked, you only need 10 to 15 seconds to brown the breadcrumbs. You may serve immediately or refrigerate. Warming up later in a microwave will work well.

Drain, and return to the pan. Roughly mash the vegetables together. Heat half the butter in a frying pan and soften the leek for 4-5 minutes. Mix into the mashed vegetables and season, to taste, with salt and freshly ground black pepper. Divide the mixture into 4, and shape into patties with your hands. Refrigerate for 30-45 minutes while you make the gravy. For the gravy, heat the oil in a frying pan over a medium heat and fry the onion for 6-8 minutes, or until softened and caramelised. For more Recipes, Helpful tidbits and Product reviews: Please join me at: www.facebook.com Gluten Free Carrot, Zucchini & Apple Muffins: Pre-heat Oven 375* 2/3 Cup Vegetable Oil 2 large Eggs 2/3 Cup Sugar 1/2 Cup Brown sugar, packed 1 tsp vanilla extract 2 Cups Bob's Red Mill Gluten Free All Purpose flour 1 tsp Xanathan Gum 1/2 tsp Baking Soda 1/2 tsp Baking Powder 1/2 tsp Salt 2 tsp ground cinnamon 1 ¼ Cups finely shredded unpeeled zucchini ½ Cup finely shredded peeled carrot ¼ Cup Finely shredded peeled Apple (or any combo of the above fruit/veggie ~ You need 2 cups total) ½ Cup Chopped Walnuts (Optional) Spray with Cooking Spray and lightly flour (Gluten Free) 12 muffin cups. Heat oven to 375°. In a KitchenAid, beat the oil with eggs, sugars, and vanilla extract. Add the dry ingredient to the KitchenAid Bowl and mix just until blended. Fold in the shredded Carrots, Zucchini and Apples. Then fold in the Walnuts Fill muffin cups about 3/4 full. I use an Ice Cream Scoop to make the muffins even size. Sprinkle with Cinnamon & Sugar Bake for 25-30 minutes. Or until Toothpick inserted in the middle comes out clean. Remove from the Muffin tins and cool on a wire wrack. By now, I still didn't master at making mochi yet. However, I am getting better at it each time I make it. Any who, this is just one way of making it and it is by using the microwave. Mochi can also be made through steaming as well. However, steaming will take longer. There is really nothing that healthy about mochi. Cinnamon 1 tsp. Baking Powder 3/4 tsp. Baking Soda 1 tsp. Xanthan Gum Add: 1 cup Unsweetened Applesauce 1/2 cup Milk 3 TBL. Vegetable Oil 1 Egg Mix until all the dry ingredients have been mix together but do not over beat Add: (Optional) Fold in ½ Cup Raisins Spray a 12 cup muffin tin with Cooking spray or use muffin cups. Use an ice cream scoop to help fill the muffin tin. Topping: Mix in a small bowl: 2 TBL. Melted Butter 1/2 cup Bobs Red Mill Gluten Free Thick rolled Oats (Or quick cooking Oats) 2 TBL. firmly packed Brown Sugar 1/2 tsp. Cinnamon Sprinkle a little bit of the topping on top of each muffin/batter Bake 400* Approx: 25-30 minutes or until toothpick inserted in the middle comes out clean and golden brown Remove from muffin tins cool on wire wrack Best served warm After the muffins cooled off I froze the left overs in the Freezer in a container. This was a requested video on how I make my chicken tenders. Chick-Fil-A chicken tender: 1 lb chicken breast cut up (boneless, skinless) 1 1/4 c of flour 2 tbsp powder sugar 2 tsp salt 2 tsp pepper 1/2 tsp chilli powder 1 c milk 1 large egg Directions: mix egg and milk together. Once chicken is cut up soak chicken in milk/egg mixture for atleast 30 minutes inside refridgerator covered. Mix flour, powder sugar, salt, pepper, and chilli powder together. Coat chicken well and fry until lightly golden brown. Super easy and its a great freezer item. Just take out of freezer (no thawing neccessary) and heat in oven on 350 degrees for about 10 minutes or until heated. Let me know if you try these and what you think about it.
