They make the perfect appetizer or a really nice, light dinner as well. They're especially great for anyone trying to watch their carbs! Asian-Styled Chicken Lettuce Cup Appetizers Makes about 10 to 12 lettuce cups Ingredients 1 cup hoisin sauce 1 tbs. rice vinegar 1 tbs. soy sauce 4 boneless / skinless chicken thighs (~1.5 lbs) 1 tbs. olive oil Head of butter lettuce or Iceberg lettuce 1 cup of loosely packed mint leaves • Pre-heat oven to 375 degrees • Mix together hoisin sauce, rice vinegar, and soy sauce in a small bowl • In a larger bowl, season and tenderize chicken with 2 tbs. of the hoisin mixture + 1 tsp. kosher salt • Heat a cast iron pan over medium-high heat. When pan is hot, add 1 tbs. of oil to pan and then sear chicken for about 3 minutes on each side. Place in oven and roast for 15 to 20 minutes, until chicken is cooked through • While chicken is roasting, prepare greens. Tear lettuce into smaller pieces and slice mint into ribbons • When chicken is done cooking, let cool for about 5 minutes, before chopping into smaller pieces. Press wonton wrappers into mini muffin pans, spray with cooking spray. Bake for 6 to 8 minutes or until golden brown. Brush inside of cups with 2 tbsp. hoisin sauce. ~ Mix pork with remaining 2 tbsp. hoisin sauce and 1 tbsp. soy sauce. In another bowl whisk remaining 4 tbsp. soy sauce, broth, sugar, sesame oil, and cornstarch; set aside. ~ Heat oil in skillet; add pork and sauté 3 minutes. A fun way to get your ham, eggs and toast in one little bundle. Found this idea in a magazine at the library (some kind of country cooking magazine) but didn't make note of the name because this is really more a method than a recipe. Cut crust off bread Roll out bread as thin as possible with rolling pin. Press flattened bread into well greased muffin tins. Brush bread cups with a bit of melted butter. Bake bread cups at 375F for 5-7 minutes or until light golden brown. Curl a piece of thin deli ham into the cup and add thin slices of cheese along the sides of the bread cups. Break an egg into each cup (medium sized eggs probably work best) Bake egg cups at 375F for 14-18 minutes until egg whites are barely set and still appear moist. This recipe was emailed to me as a subscription to Pillsbury. They have since modified the recipe(!!!!) since I printed it 2 days prior to my baking these: www.pillsbury.com Fail. So sad, what a waste. I need to start looking for the recipes online before making them so I can see the ratings and feedback. I am NOT the only person this issue happened to! Thank goodness, I was beginning to think it was just me. Others had issues getting cookies out of the cups and falling apart. Others had issues putting them into the cup in the first place. Others had issues with the 'icing' being too runny. So, lesson learned. I will endeavor to look online and see what others have encountered and try to 'fix' it before wasting a bunch of good money. 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies 1/2 cup butter, softened 4 cups powdered sugar 1/3 cup milk (use much less!) 1/2 teaspoon vanilla (use clear vanilla if you are going to use white in your color theme) Red and blue food colors Red and blue candy sprinkles Heat oven to 350°F. Spray 24 mini muffin cups with cooking spray. Scoop 1 tablespoon cookie dough into each muffin cup. (This part was not present in my printout!!): Press dough in bottom and up side of each muffin cup, pressing slight rim above top. Bake 10 to 13 minutes. Cool 10 minutes in pan.
