Lina Fernandez is an amazing cook. She used to own El Laurel in Oaxaca. It was a very small restaurant with a great and well-deserved reputation. She only made her chiles en nogada a few weeks a year when the special apples and peaches were in season and her many fans would flock to her place for this incredibly rich and tasty dish. Lots of ingredients and lots of work, an expensive dish to make, but always so tasty. Lina is a real maestra.

Also, water helps wash seeds and heat out, but also flavor, so if you can handle a LITTLE bit of heat, don't wash them out!
