I first learned how to make this easy recipe for apple fries while working at a French restaurant in Los Angeles. It is so simple and easy to do.
1 Granny Smith apple, cored, peeled and sliced
1/2 cup cornstarch, or as needed
DIPPING SAUCE
1/4 cup whipped cream cheese
1/4 cup marshmellow cream
Dash of pumpkin pie spice
Whisk sauce ingredients until creamy.
Core, peel, and slice your apple. Coat apples well with corn starch. Shake off excess corn starch in a strainer and fry in a deep fryer set at 375 for about 3 minutes or until golden brown.
Sprinkle with a mixture of cinnamon and sugar, which has been premixed.
Chef Tip: You can use your favorite apple in this recipe. I also like to omit the cinnamon and sugar and serve plain apple fries with my favorite pork dish.

Banana Pancakes
2 eggs
1 cup all-purpose flour
1 cup whole-wheat flour
2 cups milk or buttermilk
1/4 cup vegetable oil
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon pumpkin pie spice (or nutmeg)
2 ripe bananas, chopped into small pieces
Garnish:
Fresh strawberries, whipped cream and real maple syrup
Mix dry ingredients and then stir in wet ingredients. Mix well, then let stand about 10 minutes to allow banana flavor to meld. Heat frying pan, spray with cooking spray and cook pancakes about 2 minutes on each side. Flip onto serving plate and enjoy with strawberries, whipped cream and real maple syrup.

Inspired by the funnel cakes found at Country Bakery in the LA Farmers Market, these Pennsylvania Dutch recipes are a favorite at county fairs. But do you need a funnel to make funnel cake? Actually, these days, it's much easier to use a pastry bag. You can also just pour it from a pitcher into the oil. This funnel cake recipe calls for 3 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon salt and 1/4 cup sugar. Next, stir in 2 cups of milk and 3 beaten eggs. Your funnel cake batter is ready. There's no need to buy a special funnel cake fryer to make funnel cake. All you need is a 6-inch cast iron pan. Heat 2 cups of canola oil to about 350 degrees. If you don't have a frying thermometer, you can tell if the oil is ready with a wooden spoon. Just place it in the hot oil and if a lot of bubbles form around the edge, your oil is hot enough for frying. You can also flick some water or a bread cube in the oil. If it sizzles immediately, the oil is ready. When you're oil is hot, drizzle 1/2 cup of the funnel cake mix into the hot oil, making a circular crosswise pattern. Let it set about 2-3 minutes, or until it looks nice and golden brown underneath. Flip it over and cook the other side, then remove with a slotted metal spoon or metal tongs onto a paper towel or wire rack. Beef tenderloin recipes do not have to be complicated. Today's recipe calls for just a few simple ingredients and it will rival any steak on any restaurant menu.
Let's go over a few tips about steak cuts and beef tenderloin. The USDA top three grades of beef are prime, choice and select. Only about 2-3 percent of the beef sold in the U.S. is prime, which also has the most marbling.
What is marbling? When choosing your steaks, pay close attention to the marbling. Marbling is the little flakes of fat within the muscle. When steaks are cooked at a high temperature, the marbling melts, creating a tender, juicy steak. The more marbling a steak has, the better it will taste.
The beef tenderloin is a non weight-bearing muscle, which receives very little exercise and is why it's so tender. There is only 4-6 pounds of beef tenderloin per steer, which is another reason it's so expensive.
Beef Tenderloin with Marsala and Shallot Pan Jus
2 beef tenderloin steaks
Sea salt
Fresh cracked pepper
Sauce:
1/2 cup water
1 teaspoon tomato paste
1/4 cup Marsala wine
1 tablespoon balsamic vinegar
1 tablespoon Worcestershire sauce
To finish:
1 small shallot, minced and set aside
1 tablespoon butter, set aside
Mix sauce ingredients (except for shallot and butter) in a bowl and set aside.
Preheat pan on high. Add 2 tablespoons extra virgin olive oil. Add steaks and lower heat to medium. Turn steaks after 3-5 minutes. To sear edges, set steaks on their side. Check doneness of the other side after 3-5 minutes. The steaks will continue to cook once you remove them — a term known as carry-over cooking.
Remove steaks, and using the same pan, add diced shallots to pan. Scrape the meat off the bottom of the pan. Add sauce mix and turn pan back to high. Cook until it has reduced by half. Next, finish the sauce and add 1 tablespoon of butter to the sauce. This will help thicken it a bit more and give the sauce a nice shine.
Serve on top homemade french fries and top steak with your homemade sauce. When I served this steak for our neighbors, they said they could have practically cut it with their finger.

Introduced to California in 1769 by missionaries, date palms thrive in the hot, sunny climate of the Coachella Valley. In fact, about 95 percent of US grown dates come from California. Opened in 1924 by Floyd and Bess Shields, the historic Shield's Date Garden is a great place to sample many date varieties, each fruit with its own unique taste. Among the most popular are the large Medjool dates, prized for their sweet, moist and chewy texture. Other types of dates that grow in Palm Springs and nearby Bard Valley include the deglet noor, Barhi, honey, Khadrawi, golden princess and abbada black date. The blonde dates, grown only at Shield's, are especially moist and delicious. Native to Northern Africa and Western Asia, dates are a nutritious and delicious snack. The dates nutritional value includes a good dose fiber, B-complex vitamins and more potassium than bananas. They also contain selenium, which protects against heart disease and cancer, and have only 23 calories per bite. Dates are delicious made into a sticky date pudding, date bread, date cookies or a date loaf. On their own, dates can keep one month in the refrigerator and up to a year in the freezer. After watching the quick 15 minute film about the "Romance and Sex Life of the Date," I had to sample one of Shield's signature date shakes, which are famous in the California desert. To make a date milk shake, all you need is a blender, 1 heaping cup vanilla ice cream, 1/2 cup cold milk and 1/4 cup finely chopped dates. In lieu of the chopped dates, you can also substitute 1/4 cup of frozen date paste, made from a mixture of 1/4 cup Shield's date crystals and 1/4 cup cold water. Blend well and enjoy!
