Refreshing fruit, melting cheese and salty chips: what more could you want? Delish! What you need: rice 1 mango several Tablespoons olive oil 1 pound chicken cut into bite-sized chicken soul food seasoning (recipe below) 1 bag tortilla chips 1/2 cup shredded monterey jack cheese 1 can tropical fruit salad Directions: Cook desired amount of rice according to package instructions, substituting fruit juice for water if desired Dice 1 mango Add chicken to pan with heated olive oil When chicken is done, add soul food seasoning a little at a time until you like the flavor you have reached Spread chips on platter or on individual plates. This will serve 2 or 3, depending on the people Spread the cheese on top. Add more if needed Melt cheese in microwave. The easy and quick delectable Southern classic. What you'll need: bacon grease 2/3 cup flour 1 1/2 cups cornmeal 1/2 teaspoon black pepper 2 eggs 1/2 cup milk 2 or 3 green tomatoes Directions: Heat the bacon grease on medium high heat In a medium bowl, combine flour, cornmeal and black pepper In another bowl beat milk and eggs with a fork Dip tomato slices in the egg wash Dredge slices in cornmeal mix Fry in hot grease until brown. Turn and let brown. Remove. Drain on paper towels. An ageless all-American entree that stands up to the test of time. What you'll need: 1-2 pounds catfish nuggets 1 egg 2 cups buttermilk (or regular milk) 2 cups cornmeal salt and pepper vegetable oil Directions: Beat one egg Heat 1-2 inches of vegetable oil in large skillet on medium high heat Add buttermilk and beat together In another bowl combine cornmeal, salt and pepper Rinse the fish Dip the fish in the egg wash Dredge fish in cornmeal Place fish in heated oil Fry approximately 3 minutes, turn and fry 2-3 minutes longer They are done when golden brown Drain on paper towels Enjoy! When I compute the cost of each recipe I count the cost of items purchased to make the dish.
