www.nutritionalchoice.net Cucumbers are in peak season between May through July. Its a great food to add to your diet if you are trying to cut calories in preparation for the summer months. Because they are so low in calories. Do you know that 1 full cup of chopped cucumber is only 14 calories! Youve probably seen or even used sliced cucumbers to reduce puffy eyes, but also, cucumber juice is good for the complexion. Its a very hydrating vegetable that can prevent water retention. When choosing a cucumber, if you plan to eat the skin, which contains many nutrients, then choose organic. The conventionally grown are coated with a wax and can trap chemicals and pesticides. You dont want to ingest that. Always choose the firmer ones, avoiding the ones with wrinkles or indentions. That means they are going bad. To keep their nutritional value, store them in the refrigerator for up to 10 days. Store cut cucumber in an air tight container and use within a couple of day. Some ways you can eat these regularly is simply serve them on vegetable trays at your picnics this summer, instead of the old stand-bys of carrots and celery. Simply peel them if they are not organic, and then cut in half length wise. Scoop out the inside seeds, then cut into strips for dipping in hummus. Add cucumber slices to sandwiches, wraps and even hamburgers. Add chopped and seeded cucumber to plain yogurt for a refreshing snack. Make an unusual appetizer of round slices of cucumber, tomato topped with a slice of avocado and drizzle with olive oil and balsamic vinaigrette. Or even take a whole grain cracker, spread a little cream cheese and top with sliced cucumber. Chop cucumber into tuna or chicken salad. For a refreshing beverage, take a whole cucumber and slice it thinly, add with it a whole lemon also thinly sliced and add some fresh mint leaves combine with a large pitcher of water. Within a couple of hours, you will have a delicious drink. And lastly, they make a wonderful crunchy snack all by themselves.

A tasty low calorie, english classic with a twist, Mushrooms were just what was needed to lift this family favourite, dumplings were not needed after two bowls full of this, ideal for the cold evenings ahead. Ingredients; First Part:~ 1 ib. of Braising Steak or any stewing beef cut, 2 x Cloves of garlic chopped, 1 x teaspoon of mixed herbs, 1 x teaspoon of Paprika, 1/2 tablespoon of salt, (optional to taste) couple of dashes of worcester sauce, (lea & perrins) Second Part:~ A punnet of Mushroom, Sliced, 3-4 Sweet potatoes, diced, 6-7 large Carrots, diced, 1 x Large Leek, sliced, Method:~ Spray a large pan with low-cal. cooking spray, and lightly fry off the beef, when brown, add the onions, and all the first part ingredients, bring to the boil, cover with lid and simmer for 1 1/2 hours, stir every 20 minutes, Stir in all the vegetables of the second part, except for the mushrooms, make sure all the mixture is covered by the liquid, by topping up with beef stock, (oxo) about 3/4 pint, cover again and bring to the boil, when boiled add the mushrooms, now simmer for 40 minutes, test the veg for tenderness, alow more time if not quite ready, serve or reheat later and serve, This recipe will give three people two hearty bowls full each, Enjoy!
