In this video, betty demonstrates how to make Loaded Tex-Mex Lasagna. Along with lasagna noodles, this one-dish meal contains eggs, yogurt, 3 kinds of cheese, Italian sauce, black beans, and spinach. It's an interesting dish that is loaded with lots of healthy ingredients to start your New Year!

9 lasagna noodles, cooked according to package directions and drained (I put about ½ teaspoon salt in the water to cook the lasagna.)
2 large eggs, lightly beaten
4-oz. cream cheese, softened to room temperature
6-oz. carton plain yogurt
1 cup shredded mozzarella cheese
10-oz. package frozen chopped spinach, thawed and drained (I squeeze the thawed spinach with paper toweling to remove all liquid.)
¼ cup chopped fresh cilantro
½ teaspoon salt
3 cups shredded Mexican-style cheese, divided (You may use taco-style, Monterey Jack, or pepper jack cheese.)
15-oz. can black beans, drained and rinsed
(2) 23.5-oz. jars Italian sauce (I used a garden vegetable variety.)
½ teaspoon ground cumin seed
cooking oil spray
In a mixing bowl, stir together 2 large lightly-beaten eggs, 4-oz. softened cream cheese, 6-oz. plain yogurt, a 10-oz. package frozen spinach, thawed and drained, ¼ cup chopped fresh cilantro, ½ teaspoon salt, and 1 cup shredded mozzarella cheese. Set aside. In a separate mixing bowl, mash a 15-oz. can of rinsed black beans. Stir in (2) 23.5-oz. jars Italian sauce and ½ teaspoon ground cumin seed. Spread 1/3 of the black bean mixture into a 13-inch by 9-inch by 2-inch Pyrex baking dish that has been sprayed with cooking oil spray. Place 3 cooked lasagna noodles across the bottom. Spread ½ of the spinach mixture over the top of the noodles. Sprinkle 1 cup Mexican-style cheese over the top. Repeat layers one time, and then top with remaining 3 lasagna noodles and the remaining 1/3 of the bean mixture. Cover with aluminum foil and bake at 350 degrees (F) for about 45 to 50 minutes. Remove the aluminum foil, sprinkle with remaining 1 cup of Mexican-style cheese. Bake an additional 5 to 10 minutes or until cheese is melted. This is a hearty, but healthy casserole that you will find to be very tasty, economical, and warming during the winter months ahead. I hope you enjoy it! --betty

This wonderful sauce is quite versatile, and you can use it in many ways! Ingredients: ½ cup mayonnaise ½ cup sour cream 1 teaspoon grated lemon rind 1/8 to 1/4 cup grated horseradish (I used the jarred variety, and I only used 1/8 cup; it's up to your taste. Don't use the creamy style, because it is not strong enough.) In a small bowl, combine ½ cup mayonnaise, ½ cup sour cream, 1 teaspoon grated lemon rind, and 1/8 to 1/4 cup grated horseradish. Stir until well combined. Pour into a small serving dish, and provide a serving spoon. I serve this with roast beef, prime rib, and steak. It is also a great spread for roast beef sandwiches, plus you can use it with anything that is enhanced by horseradish flavor. (I added 1 teaspoon salt to the boiling water.) Drain macaroni when done. In the meantime, combine 2 cups cottage cheese, an 8-oz. carton sour cream, 1 well-beaten egg, ½ to ¾ teaspoon salt, a dash of black pepper, and 2 cups shredded sharp Cheddar cheese in a large bowl. Add cooked and drained macaroni to cheese sauce and stir mixture until well-combined. Spoon macaroni mixture into a 9-inch by 12-inch by 2-inch baking dish, which has been sprayed with cooking oil spray. Sprinkle with paprika, if desired. This is a recipe that I created about 35 years ago to use our over-supply of vegetables, and it has turned out to be a very nice side dish or an addition to soups and stews. It is very light and also tasty, and you can control the ingredients to keep it natural and healthy. It is also great for dieters. Ingredients: 1 ½ tablespoons extra virgin olive oil ½ cup green bell pepper, chopped ½ cup onion, chopped ½ cup celery, chopped 1 tablespoon cornstarch 4 cups tomatoes (any variety), peeled and coarsely chopped (I do not remove the seeds, but you may choose to do that. If you need a quick and easy way to peel tomatoes, please check my Quick Tip 75 on peeling tomatoes.) ½ teaspoon sugar ½ teaspoon salt ½ teaspoon ground black pepper Drain 4 cups chopped tomatoes, pressing to get as much juice from them as possible, and place the juice in a measuring cup or small bowl. Set tomatoes and juice aside. In a large, deep skillet, place 1 ½ tablespoons olive oil. Add ½ cup chopped green pepper, ½ cup chopped onion, and ½ cup chopped celery. It offers a full service, Southern-gourmet luncheon from old family recipes, including an appetizer, an entree, dessert, and beverage. A unique feature of The Glitz is that all the food is prepared daaily from the finest quality ingredients. there are several delightful selections from each course to meet individual palates. To insure variety, the menu changes every two weeks. On our visit to The Glitz, we began our lunch with a chilled apple-cranberry drink. Rick had a smoked salmon appetizer, while I chose the cream of broccoli soup. Then we both had a salad of fresh, tender lettuce with mandarin oranges, English walnuts, sliced purple onions, and poppy seed dressing. Rick's entree was Irish beef stew, while I chose turkey and mushroom crepes topping with a delicious Mornay sauce. For dessert, I chose the nonesuch Kiss, a small baked meringue, topped with jamoca ice cream, whipped topping, and a maraschino cherry. Rick chose the raspberry sorbet, which was accompanied by cookie pirouettes and a strawberry. Rick and I both thought the lunch looked and tasted wonderful, and the environment was quite pleasant. Ingredients:
1 cup creamy (smooth) peanut butter
1/2 stick butter
1/2 stick margarine
1/2 cup white sugar
1/2 cup brown sugar, firmly packed
1/2 teaspoon vanilla extract
1 egg
1 1/2 cups self-rising flour
Cream 1 cup peanut butter, 1/2 stick butter, 1/2 stick margarine, 1/2 cup white sugar, and 1/2 cup brown sugar until smooth. Add 1/2 teaspoon vanilla extract and 1 egg. Beat well, until all ingredients are well-combined. Stir in 1 1/2 cups self-rising flour, until mixture turns into a ball shape. Cover with plastic wrap and refrigerate for 4 hours or overnight. When ready to make cookies, roll small pieces into 1-inch balls and place them about 2 inches apart on a baking sheet. Use a fork to flatten each ball with a criss-cross pattern. Bake in an oven that has been preheated to 375 degrees for 10 minutes. Remove from the oven when done, and immediately place on a cooling rack or flat platter to maintain their shape while cooling. When cool place in a zip-lock plastic bag or sealed container for storage. These are the yummiest of cookies, and a great comfort food!

This is very simple to make, and it can be made with champagne or with a substitute, if you prefer a nonalcoholic drink. It is green with red or green garnish; just perfect for the holidays! Ingredients (makes about 4 drinks): 1 package unsweetened lime Kool-Aid (I used lemon-lime flavor in the demonstration, but lime is better.) 1 cup sugar (I used 1 cup Stevia. You may use any artificial sweetener that has the sweetness of 1 cup sugar.) 1/3 cup water 2 scoops lime sherbet per drink champagne or substitute, as much as desired (I used club soda, but other choices include ginger ale, 7-Up, Sprite, and other light colored carbonated beverages.) red or green stemmed maraschino cherries for garnish In a small bowl or measuring cup, mix 1 package lime Kool-Aid with1 cup sugar. Add 1/3 cup water and mix well. Place 2 scoops lime sherbet in a stemmed glass. Gently pour champagne (or substitute) into the glass to desired level. Spoon about a tablespoon of the Kool-Aid mixture over the top and garnish with stemmed red or green maraschino cherries. Serve immediately! Ingredients (for 12 cupcakes): 1 ½ sticks butter (3/4 cup), softened to room temperature 1 cup sugar 4 egg whites 1 ½ cups self-rising flour 1 tablespoon warm water 1 teaspoon vanilla extract yellow food coloring red food coloring In a large mixing bowl, beat 1 ½ sticks butter and 1 cup sugar until light and fluffy. Starting and ending with egg white, alternate adding 4 egg whites and 1 ½ cups self-rising flour, beating until each is thoroughly incorporated. Beat in 1 tablespoon water and 1 teaspoon vanilla until just incorporated. Divide batter into two equal parts. To one part add 10 drops of yellow food coloring and 1 drop of red food coloring. Stir until batter is a nice orange color. Now, evenly place batter into muffin tins which have been line with baking cups using ¼ cup batter for each cupcake. This will make 6 orange cupcakes and 6 white cupcakes. Bake at 400 degrees until fully cooked and golden, about 15 to 17 minutes. Remove from the oven. In this video, betty and her husband, Rick, celebrate betty's 61st birthday at Merrick Inn in Lexington, Kentucky. Merrick Inn was originally part of a large horse farm, but it was turned into a restaurant about 30 years ago. It is a beautiful dining experience, and Rick and I always have a wonderful time there. For my birthday dinner, I ordered White Meat Fried Chicken, New Potato Casserole, Creamed Spinach, French Silk Pie, iced tea, and coffee. Rick had Fried Walleye Pike, Tomato Casserole, French Fries, Peanut Butter Pie, and a Diet Coke. Accompanying our meals were fluffy yeast rolls with butter. The food was great! Rick gave me a silver neck chain to use with one of my pendants, and I was happy to get that. As always, we had a wonderful time. At home, my family regaled me by singing "Happy Birthday" (Don't count on Carter to make a career of singing!) and presented me with gifts and birthday cake. I had a great birthday! This video is not very clear, and there is a lot of chatter in the background. I apologize for the quality of the video--but the lighting was not good for making a video. Ingredients: 1 small jar carrot baby food 1 small jar turkey baby food 1 small jar beef baby food 1/3 cup wheat germ 1/4 cup powdered milk dash of salt In a medium-sized bowl, mix, 1 small jar of carrot baby food, 1 small jar of turkey baby food, 1 small jar of beef baby food, along with 1/3 cup wheat germ, and 1/4 cup powdered milk. You may add more powdered milk and/or wheat germ, if needed, for working this dough. Form the dough into small patties, and bake at 350 degrees for about 15 minutes. (I used some cooking oil spray on the baking pan, but it probably was unnecessary.) These dog cookies are wholesome and healthy, and you can control exactly what goes into them. In this video, betty makes her scrumptious Buttery Croutons. These are just toasted, buttered bread cubes, but you can add any flavor that you like. You will enjoy them with any green salad, or you can use them in dressing, meatloaf, and many other recipes. Ingredients (for the amount I demonstrated): 4 slices white bread, including crust (You may use whole grain bread, and you may use as many slices as you need for the amount of croutons you want.) 4 tablespoons butter, softened to room temperature (or as needed) If convenient, freeze your loaf of sliced bread at least overnight. When you are ready to make your croutons, separate out as many slices of bread as you need. Now, spread both sides of frozen bread slices with a thin layer of butter. (You may leave the butter off, if you are watching fat and calories.) As the bread is buttered, you may add garlic powder, dried herbs, etc. to fit your taste, although these are very good plain. Next, (while the bread is still frozen, use a knife to slice vertically and horizontally, forming cubes of buttered, frozen bread. Place the cubes in a single layer in a shallow baking pan. Use more than one pan, if needed. Bake for about 15 minutes, stirring every 5 minutes. Watch closely, so that the croutons do not get overly brown. Use kitchen shears to cut each flour tortilla into 8 equal triangular sectors (or any shape you like for crackers). Brush each triangle with olive oil. To do this, lay them all out and brush them all at once. Sprinkle all triangles with salt and with paprika. Turn all of the triangles over, and repeat the brushing of olive oil, and sprinkling of salt and paprika. Place all triangles on a baking sheet and bake at 300 degrees for about 12 minutes. Remove from the oven and cool before serving. These crackers taste great, and this recipe allows you to use up flour tortillas that you have in your refrigerator that are getting old! This is granola made of oats, chocolate, dried cranberries, and a variety of nuts, bound together with sweetened condensed milk. This is a high-energy food that I hope you will enjoy! Ingredients: 1 ½ cups old fashioned oats 1 ½ cups instant oats ¾ cup wheat germ ½ cup slivered almonds ½ cup chopped pecans ½ cup English walnuts ¾ cup semi-sweet chocolate chips ¾ cup dried cranberries 21 ounces sweetened condensed milk (1 ½ 14-ounce cans) cooking oil spray In a large bowl, mix 1 ½ cups old fashioned oats,1 ½ cups instant oats, ¾ cup wheat germ, ½ cup slivered almonds, ½ cup chopped pecans, ½ cup English walnuts, ¾ cup semi-sweet chocolate chips, ¾ cup dried cranberries, and 21 ounces sweetened condensed milk. Pour into a large baking pan that has been sprayed with cooking oil spray. Bake at 325 degrees (F) about 20 to 30 minutes, stirring occasionally, allowing clumps of granola to form. You may alternatively make this mix into granola bars by pressing the mixture into a prepared baking pan. When granola is golden, remove from oven and place in a serving bowl. Cool. If you are making granola bars, cut bars into desired size and cool on platter. This granola can be stored in an airtight container for a week or frozen for use as desired. In this video, betty demonstrates how to make a Fruit and Lemonade Slushie. The lemonade is sugar-free (if you desire), and the fruit may be varied to suit your taste. Ingredients (for 1 large slushie): ¼ cup cold lemon juice (I used Realemon, which is 100% lemon juice from concentrate.) ¼ cup cold water ½ cup sugar or sugar substitute (I used Stevia.) 2 cups cold water about 2 cups of frozen fruit, as desired (I used one sliced banana and an equal amount of halved strawberries and an equal amount of blackberries—all frozen in pieces, for about 6 hours or longer.) Make concentrated lemonade syrup by combining ½ cup lemon juice, ¼ cup water, and ½ cup sugar or sugar substitute. You may refrigerate this and use it to make lemonade by the glass by just adding 2 or 3 tablespoonfuls to ice and cold water, to taste. For making the Fruit and Lemonade Slushie, make lemonade by adding all of the concentrated lemonade syrup to 2 cups of cold water and set aside. Place frozen banana slices, frozen strawberry halves, and frozen blackberries in a blender. Add 1 cup of prepared lemonade. With the lid on the blender, pulse the frozen fruits and lemonade until the mixture is thick and smooth. If you like it thinner, just blend in more lemonade. You will need to use a spatula to loosen the fruit and lemonade mix a few times during the blending process. Ingredients: one 4-pound chicken, uncooked and rinsed (giblets removed) 2 teaspoons salt A grinding of fresh black peppercorns 1 teaspoon garlic 1 tablespoon finely-chopped fresh parsley (If you are using dried parsley, use 1 teaspoon.) ¼ teaspoon ground red pepper 2 teaspoons chicken bouillon granules Place chicken in a large pot and cover with water. Bring to a boil over medium-high heat and add 2 teaspoons salt, a grinding of fresh black peppercorns, 1 teaspoon garlic powder, 1 tablespoon chopped fresh parsley, and ¼ teaspoon ground red pepper. Cover and reduce heat. Simmer 1 hour. Remove chicken and place it on a platter to cool. Add 2 teaspoons chicken bouillon granules to the broth the chicken was cooked in, and set the chicken broth aside until needed. After chicken has cooled for about 30 minutes, remove the skin and bones, and chop the chicken into chunks. Reserve cooked chicken until ready to continue making Chicken and Dumplings. This method of cooking chicken may be used to obtain chicken for salads, casseroles, etc., but it is the traditional way to prepare chicken for Chicken and Dumplings.
