In this video, betty demonstrates how to make Rich Chocolate Frosting. This frosting is composed of unsweetened chocolate squares, butter, eggs, half-and-half, confectioner's sugar, and flavorings. It looks lovely and tastes decadent!
Ingredients:
(2) 1-oz. squares unsweetened chocolate
½ cup butter, softened to room temperature
1 egg (I used ¼ cup egg substitute—Egg Beaters.)
1 tablespoon half-and-half
2 teaspoons vanilla extract
1 ½ teaspoons lemon juice
16-oz. package confectioner's sugar
Place (2) 1-oz. squares unsweetened chocolate in top of a double boiler. Bring water in double boiler to a boil over medium heat. Reduce heat to low and heat chocolate until it melts. Set aside to cool slightly. Place ½ cup butter in a large mixing bowl. Mix with an electric mixer. Add cooled, melted chocolate, 1 egg (or ¼ cup egg substitute), 1 tablespoon half-and-half, 2 teaspoons vanilla, and 1 ½ teaspoons lemon juice. Mix well with mixer. Continue to mix with mixer while slowly adding a 16-oz. package of confectioner's sugar. Beat until the mixture is smooth and spreadable. Spread immediately on cakes, cupcakes, etc. This is a beautiful frosting that is so easy to use. You can easily spread it over the top of Never Fail White Frosting on my Best Chocolate Cake with Double Frosting! Enjoy!!! --betty

This is the recipe I chose to make following the tour Rick and I took of the Ale-8-one bottling facility in Winchester, Kentucky. It is super easy to make, since it uses a lemon cake mix, a vanilla pudding mix, some vegetable oil, eggs, and a bottle of Ale-8-One! If you would like to purchase Ale-8-One soft drinks or other Ale-8-One products, just go to www.ale-8-one.com. They also have some great recipes there for using their products! Ingredients: 1 box lemon cake mix 1 large box vanilla pudding and pie filling mix (I used the 4.6-oz. Jell-O "Cook 'n Serve" mix; you may choose the instant mix, if you prefer.) 4 eggs, well beaten ¾ cup vegetable oil 10 oz. Ale-8-one soft drink Beat 4 eggs with an electric mixer. Add 1 lemon cake mix, 1 large vanilla pudding and pie filling mix, ¾ cup vegetable oil, and 10 oz. Ale-8-one soft drink. Stir well, and then beat with electric mixer for 2 minutes, or until batter is smooth. Pour into a greased and floured 13-inch by 9-inch by 2-inch baking dish. Bake at 375 degrees for approximately 40 minutes. (You may test for doneness by placing a toothpick into the thickest part. If it comes out clean, the cake is done.) Use an electric mixer set to medium to mix until light until fluffy. Beat with electric mixer on high speed for 5 minutes, scraping the bowl as needed. In a separate bowl, mix 2 ¾ cups all-purpose flour, 2 ½ teaspoons baking powder, and 1 teaspoon salt. On low speed, mix the flour mixture, alternately with 1 ¼ cups milk into the fluffy butter mixture. Pour cake batter into a 13-inch by 9-inch by 2-inch Pyrex baking dish that has been buttered and floured. Ingredients: ½ cup butter, softened 8 ounces finely shredded Cheddar cheese 1 cup self-rising flour (You may use all-purpose flour.) ¼ teaspoon garlic powder cooking oil spray Use an electric mixer to beat together ½ cup softened butter and 8 ounces shredded Cheddar cheese. Add 1 cup self-rising flour and ¼ teaspoon garlic powder and mix thoroughly. I used my electric mixer for all of the mixing. Form dough into a ball and place in on a clean, smooth surface. Roll the dough into a log that is about 1inch in diameter. Chill or freeze. To prepare for baking, cut log into 1/3-inch slices. Place on a shallow baking pan that is lined with parchment paper and sprayed with cooking oil spray. Place slices about 1 inch apart. Bake at 400 degrees (F) for 8 to 10 minutes. Remove from baking pan and place on cooling rack to cool. When cool, transfer crackers to a nice serving plate. This recipe will make approximately 2 dozen cookies. I customized this frosting to accompany the Mint Julep Cupcakes in my last video, but this frosting would be great with other cakes and cupcakes, particularly chocolate. Ingredients: 1/3 cup butter, softened 3 cups confectioner's sugar (This is the same as powdered sugar or icing sugar.) ½ teaspoon peppermint extract 1 ounce Bourbon whisky 1 tablespoon milk 1 tablespoon finely snipped fresh spearmint leaves With an electric mixer, blend 1/3 cup softened butter, 3 cups confectioner's sugar, ½ teaspoon peppermint extract, 1 ounce Bourbon whisky, and 1 tablespoon milk. Beat until frosting is of spreading consistency, adding more milk for thinner frosting or adding more confectioner's sugar for thicker frosting. Gently stir in 1 tablespoon finely snipped fresh spearmint leaves. Ice or pipe frosting onto cookies, cupcakes, or cake. I piped this onto Mint Julep Cupcakes. Delicious! Ingredients: 4 uncooked chicken half-breasts, washed and dried with paper towel, with each half-breast cut into half, making 8 pieces. ½ cup all purpose flour ½ teaspoon salt ½ teaspoon ground black pepper ¼ cup extra virgin olive oil 8 ounces sliced mushrooms 2/3 cup sliced green onion tops 6 medium tomatoes, peeled, seeded, and chopped, including juice ½ teaspoon salt ½ teaspoon dried sweet basil 1 ½ cups Marsala wine (For those of you who do not want alcohol in this dish, substitute 1 ½ cups chicken broth.) 12 ounces (uncooked) angel hair pasta, cooked according to package directions ½ cup freshly grated Parmesan cheese ¼ cup fresh chopped parsley In a large Zip-loc bag, place ½ cup flour, ½ teaspoon salt, and ½ teaspoon ground black pepper. These raised biscuits are a cross between dinner rolls and regular biscuits. They would be terrific on your Easter table! Ingredients: 2 packages active dry yeast ¼ cup lukewarm water 2 cups buttermilk 5 cups self-rising flour 1/3 cup sugar 1 cup shortening (I used Crisco, but butter will be fine.) 1 stick butter, melted and cooled cooking oil spray Dissolve 2 packages dry yeast in ¼ cup lukewarm water (105 degree [F]). Let stand 5 minutes or until bubbly. Add 2 cups buttermilk to yeast mixture, and set aside. Combine 5 cups self-rising flour and 1/3 cup sugar in a large bowl. Cut in 1 cup shortening (Crisco), until mixture resembles coarse cornmeal. Add buttermilk mixture, mixing until dry ingredients are moistened. Turn dough out on a floured surface and knead lightly about 4 times. Roll dough to ½-inch thickness. Cut with a 2 ¾-inch biscuit cutter. Dip each biscuit into melted butter and place on a baking sheet that has been sprayed with cooking oil spray. Cover loosely with plastic wrap and let rise in a warm place, free from drafts, for 2 hours. Bake at 450 degrees (F) for 10 to 12 minutes. Serve hot! These are the BEST!!! In this video, betty demonstrates how to make Home Fries. This recipe was inspired by the recent visit my husband, Rick, and I made to Lynn's Paradise Café in Louisville, Kentucky for breakfast. One of the items I ordered was Home Fries, and they were delicious! Here is my version of Home Fries. Ingredients (for 1 large serving): 2 Russet potatoes, peeled, washed, and diced into ½-inch cubes (You may use another type of white potato, if you like.) Salt, to taste 1 tablespoon butter 1 tablespoon peanut oil Place the cubed potatoes in a medium-sized microwave-safe bowl and cover with plastic wrap. Microwave on HIGH for a total of 5 minutes, stopping after 2 ½ minutes to shake the bowl, redistributing the potatoes. After 5 minutes (total) of microwaving, drain the potatoes through a colander, shaking to remove as much water as possible. Sprinkle the partially-cooked potatoes with salt, to taste, stirring to coat. In a 10 ½-inch skillet, melt 1 tablespoon butter and 1 tablespoon peanut oil over medium heat. When combined oil is hot, placed the cubed, partially cooked, salted potatoes into the oil. With a spatula, spread potatoes out into a single layer. Reduce heat until potatoes are just sizzling and cover with a lid that fits. Cook for 2 minutes without lifting the lid. After 2 minutes, lift the lid and check around the edges to see if the potatoes are browning on the bottom. If they are not completely brown on the bottom, replace the lid and cook 1 minute longer. 15-oz. can pickled beets, drained, rinsed, and cubed
1 yellow squash, cubed
1 cucumber, cubed
1/2 cup chopped green onion tops
1/2 cup chopped curly parsley
1/4 cup white wine vinegar (You may use any type of vinegar.) or to taste
1/4 cup sugar or artificial sweetener or to taste
Place 1 pound frozen green peas, a 15-oz. can cubed pickled beets, 1 cubed yellow squash, 1 cubed cucumber, ½ cup chopped green onion tops, ½ cup chopped curly parsley, 1/4 cup white wine vinegar, and 1/4 cup sugar or artificial sweetener in a large bowl. Toss, in order to coat all vegetables with vinegar and sugar. Cover with plastic wrap and refrigerate 4 hours (or overnight). Serve in small bowls or on salad plates. Enjoy! In this video, betty demonstrates how to make her version of Cheesy Peas. This recipe was inspired by our recent trip to Michael's Restaurant in Ravenna, Kentucky. I have made almost every item that we found on the salad/buffet bar in bettyskitchen. I also have Blakemore peas in bettyskitchen, which is a vegetable side dish that is a little more elaborate than this simple version of Cheesy Peas, and you may prefer it.
Ingredients:
12-oz. package frozen green peas
8-oz. package Velveeta cheese product, cut into cubes
2-oz. jar sliced pimientos, undrained
Steam a 12-oz. package of frozen green peas, until they are crisp-tender. (They should retain their bright green color. If you don't have a steamer, you may boil the peas until crisp-tender and then drain.) While the peas are being steamed, prepare your cheese sauce. In the top of a double boiler, place 8 ounces of Velveeta cheese, cut in cubes. Add a 2-ounce jar of undrained sliced pimientos. Stir continuously, until cheese is melted. Do not overheat. By the time the cheese sauce is melted, the peas will probably be steamed to the appropriate degree of doneness. Combine the peas and the cheese sauce. Stir thoroughly and pour your Cheesy Peas into a nice serving bowl. This makes a great side dish that goes with just about anything! I hope you enjoy the recipe! Love, betty

Ingredients: 10 ¾-oz. can Cheddar cheese soup ¾ cup beer 2 cups shredded Cheddar cheese ¼ teaspoon garlic powder ¼ teaspoon ground red pepper ¼ teaspoon hot pepper sauce Combine a can of Cheddar cheese soup with ¾ cup beer in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Gradually add 2 cups shredded sharp Cheddar cheese, stirring constantly until cheese melts. Stir in ¼ teaspoon garlic powder, ¼ teaspoon ground red pepper, and ¼ teaspoon hot pepper sauce. Pour immediately into a serving bowl and serve with crackers. This is also great accompanied with celery and blue cheese dip. (You can find a recipe for my Best Blue Cheese Dip in bettyskitchen.) In this video, betty demonstrates how to make a Super Easy Press-In-Pan Pie Crust. Just mix a few ingredients together, and use your fingers to press the dough into a pie pan. It's very quick, and it tastes delicious every time! Ingredients: 1 cup all purpose flour 1 tablespoon confectioner's sugar ½ teaspoon salt 6 tablespoons butter (still cold from the refrigerator and cut into six 1-tablespoon pieces) 2 to 3 tablespoons ice cold water In a large mixing bowl, combine 1 cup all purpose flour, 1 tablespoon confectioner's sugar, and ½ teaspoon salt. Stir until well-blended. Add 6 tablespoons butter. Use a pastry blender to cut butter into dry ingredients, until mixture is the consistency of coarse cornmeal. Add 2 to 3 tablespoons cold water, a little at a time, and use a fork to stir the mixture until you can form it into a ball. Use your hands to stretch the ball to thin it out some, and then place it in the center of a 9-inch pie pan (plate). Use your fingers and palms of your hands to press the pie crust dough evenly across the bottom and sides of the pie pan, until any excess comes to the top rim of the pie pan. In this video, betty demonstrates how to make Christmas Coconut Bonbons. These bonbons are made of butter, confectioner's sugar, sweetened condensed milk, pecans, and coconut, and then dipped in chocolate for a fantastic Christmas treat!
Ingredients:
½ cup butter, softened
16 ounce box confectioner's sugar
½ of a 14 ounce can of sweetened condensed milk
3 ½ ounces flaked coconut
1 cup finely chopped pecans
12 ounce bag of semisweet chocolate chips
1 ounce paraffin (optional)
In a large mixing bowl, combine ½ cup butter and a 16 ounce box of confectioner's sugar. Stir until well blended. Mix in ½ of a 14 ounce can of sweetened condensed milk, 3 ½ ounces of flaked coconut, and 1 cup of finely chopped pecans. Form mixture into 1-inch balls and place on a shallow baking pan that is lined with waxed paper. Chill balls for ½ to 1 hour in the refrigerator. In a double boiler, melt 12 ounces of semisweet chocolate chips and 1 ounce of paraffin (if desired). Use a toothpick to dip balls in melted chocolate mixture. Place on a large pan or platter that is covered with waxed paper. Chill, until ready to serve or store. When ready to serve, place the chilled bonbons on a nice serving plate, removing any excess chocolate that has stuck to the bottom. These can be made ahead and frozen. Just thaw them for a couple of hours before serving them. You may leave theses bonbons at room temperature or keep them refrigerated. They keep well when stored in a covered container. In this video, betty demonstrates how to make Christmas Fruitcake. This recipe is a tradition in my family, and my sister, Barbara, makes it every year. It is much better that pre-packaged fruitcakes, and I think you will love the combination of Christmas-y flavors!
Ingredients:
1 lb. pitted dates, chopped
1 lb. pecans, chopped
¼ lb. red, candied cherries, chopped
¼ lb. green, candied cherries, chopped
½ lb. candied, sliced pineapple, chopped
1 cup sugar
1 cup self-rising flour
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
4 eggs, well-beaten
Combine dates, pecans, cherries, and pineapple in a large mixing bowl; set aside. Combine dry ingredients; add to fruit mixture, stirring well. Stir in eggs and vanilla. Spoon batter into a buttered and floured 10-inch tube pan. Bake at 250 degrees (F) for about 1 hour and 45 minutes to 2 hours, or until a wooden pick inserted into the center of the cake comes out clean. Cool cake completely in pan. Remove, and place on a nice cake plate. Slice into ½-inch slices to serve. (It is very rich.) Note: Cake may be baked in 2 buttered and floured standard loaf pans at 250 degrees (F) for 1 hour and 20 minutes, or until wooden pick inserted comes out clean. You may think you are not fond of fruitcake, but I think this recipe will convince you that it is a great tradition for the holidays.
