I will warn you ahead of time that it is *long*, because it spans our activity during a 24-hour period—so watch only if you have the time to spare! In this video, we are just getting back into the swing of things, with a recipe for Refreshing Raspberry Tea. This is similar to a flavored tea I ordered during our anniversary dinner. In this video, betty and Rick demonstrate how to make Rotisserie Chicken on an outdoor grill. The chicken is seasoned and placed over a heated grill, rotating until it is done. The meat is tender and juicy, and this is a great alternate to regular grilled chicken. Ingredients: one 4-pound chicken extra virgin olive oil freshly ground sea salt freshly ground black pepper Open the bagged chicken and remove the giblets from the inner cavity. The giblets are not used for this recipe. Rinse the chicken in clear water and place in a container that is large enough for you to season the chicken. Trim any excess fat from the chicken (although some fat is good for basting the chicken as it cooks). Pour olive oil over the chicken and spread it with your hands all over, including the inner cavity. Grind sea salt and black pepper over the chicken, and rub it over all parts, until the chicken is well-coated with olive oil and salt and pepper. Now, place the chicken on the spit, which fits on your grill. Place the spit on the grill, when the temperature of the grill is about 350 degrees. Turn on the switch to make the spit rotate. Close the grill and cook 1 ½ to 2 hours, or until the internal temperature is 175 degrees at the thickest part of the meat. (Note: The chicken is not cooked over direct flame; it is cookeby by indirect heat.) Remove from spit, carve as desired, and place on a nice serving platter. Serve immediately. If you are looking for a diet that will definitely take the pounds off and never leave you hungry, I recommend the following. It is a starter diet, and it doesn't allow a lot of calories. (You may choose to go a little slower, and if you have *any* health issues, you should see your doctor before making any drastic change to your diet.) When you reach your goal weight, you will be able to add in other foods and maintain a happy, healthy, fit lifestyle. Notes: 1. You have to be committed to considering this as a lifestyle, not a "diet." When your weight is where you want it, you can add small portions of "treat" food, but the overall outline is for life. 2. Weigh yourself everyday at the same time wearing the same amount of clothing. If you have overeaten the day before, it will show up. 3. If there is a food group that you don't particularly like, eat it anyway, and consider it as "medicine" for a healthy and slim life. 4. Before you begin, prepare a ziplock bag with fresh carrot strips and celery sticks (or other favorite munchable vegetables). If you are ever hungry during the day, eat as much of this as necessary, until you are no longer hungry. 5. As of today, the herb garden contains curly parsley, flat parsley, thyme, oregano, sage, tarragon, rosemary, green peppers, pimiento peppers, and a couple of jalapeno peppers. These are all in great condition, but with the colder weather coming, these will probably be killed by frost in the next month or so. We have gotten a lot of good out of the herb garden this year, and it has been so easy to take care of! I opened two gifts from viewers toward the end of this video. In this video, betty demonstrates how to make her fabulous Dinnertime Shrimp Tortellini entrée. It is very quick and easy and can be used for a casual dinner or for entertaining! Ingredients: (2) 14-oz. packages frozen uncooked cleaned shrimp, thawed (I used cocktail shrimp.) 9 oz. package of frozen tortellini, thawed (I used a little more than ½ of a 19 oz. package that was a Parmesan and Romano cheese-filled variety. You may also buy this refrigerated.) 1/3 cup butter or margarine, melted 1 green onion, chopped 2 tablespoons chopped fresh basil (Use 2 teaspoons, if you are using dried basil.) ½ cup grated Parmesan cheese Thaw shrimp, and then place in a colander to drain all liquid. Dry off the shrimp with paper toweling, and set aside. Now, place the tortellini in about 2 inches of rapidly boiling water in a medium pot. Return to boiling and boil for 2 minutes. Test with a fork for doneness. It should be chewy, not mushy. Drain, and cover with aluminum foil to keep it hot. Next, melt 1/3 cup butter or margarine in a large skillet over medium heat. Add 1 chopped green onion, 2 tablespoons chopped fresh basil, and (2) 14-oz. packages of shrimp. Cook about 5 minutes, stirring constantly, until shrimp turns opaque (white or pink-looking). Add hot, cooked tortellini and ½ cup of grated Parmesan cheese to the shrimp skillet and stir gently, but completely. Pour the skillet mixture into a nice serving bowl. Ingredients:
1 1/3 cups dark chocolate wafer crumbs (I used Oreos, with centers removed, and crushed them finely.)
2 tablespoons sugar
¼ cup butter, softened
¼ teaspoon ground cinnamon
1 ½ cups semisweet chocolate chips
2 eggs
½ cup sugar
2 teaspoons rum or rum flavoring (optional—you may replace with 2 teaspoons milk.)
8-oz. carton sour cream
(2) 8-oz. packages cream cheese, cubed and softened
2 tablespoons butter, melted
whipped cream or Cool Whip
diced maraschino cherries
In a medium-sized bowl, combine 1 1/3 cups chocolate wafer crumbs, 2 tablespoons sugar, ¼ cup softened butter, and ¼ teaspoon cinnamon. Use a fork or pastry blender to mix until crumbly. Firmly press into bottom of a 10-inch springform pan; set aside. Melt 1 ½ cups chocolate chips over hot water in the top of a double boiler; set aside. In a large mixing bowl, combine 2 eggs, ½ cup sugar, 2 teaspoons rum, and an 8-oz. carton sour cream. Use an electric mixer to blend until smooth. Add (2) 8-oz. packages cubed and softened cream cheese and blend until smooth. Continue blending and gradually add 1 ½ cups melted chocolate chips and 2 tablespoons melted butter. Blend well. Pour cheesecake batter over chocolate crust. Bake at 325 degrees for 45 minutes, or until cheesecake is set in center. Cool at room temperature for at least 1 hour. Chill at least 6 hours. Remove sides of springform pan and place on serving plate. Before serving, garnish with whipped cream or whipped topping, along with diced maraschino cherries. (I formed Cool Whip into a heart-shape.) Slice into pie-shaped pieces to serve. Enjoy! Happy Valentine's Day from betty & Rick!
