See this TripWow and more at tripwow.tripadvisor.com Grameen Danone One of the most important objectives of my trip was to get to know/study Grameen Danone which is the model of Social Business that Muhammad Yunus had written his last book on and he is currently traveling the world speaking about. Having participated in the creation of Silicon Valley I have been particularly drawn to this model of creating companies whose focus is to do good (while not loosing money) rather than to make profits. I started by meeting the original Executive Director and friend of Khalid Shams - Md. Imamus Sultan and then the current Executive Director - M. Wahidun Nabi in the Grameen Bank Buidling in Dhaka. I then traveled five hours ride away to Bogra where I met Engr. Probir Kr. Sarker - Plant Manager of Grameen Danone. Grameen Danone (GD) is going through early struggles and challenges and is working to learn through experience, adjust to conditions both within and outside their control, make modifications and emerge successfully as many other of the Grameen businesses, starting with what Grameen Bank itself has done. Keeping costs down and prices at a level that the poor can afford has been a major challenge. The cost of milk, which is nearly 60% of the overall cost of the product, has nearly doubled in the last year. Labor costs - which represents 30% of the overall costs has also increased ...

Ingredients 4 tsp black mustard seeds 6 tbsp mustard oil 75g/2½oz onions, peeled, halved and thinly sliced 40g/1½oz garlic, peeled, thinly sliced 1 tsp turmeric powder 2 tsp Kashmiri chilli powder 1 tsp salt 4 x 175g/16oz steaks hake, cod, barramundi or blue-eye trevalla 50g/2oz red onion, peeled, thinly sliced 1 green cayenne chilli, thinly sliced Method 1. Place the mustard seeds into a spice grinder and grind to a fine powder. 2. Heat the mustard oil in a small frying pan, then add the onions, garlic, turmeric powder, chilli powder, mustard seed powder and salt. Gently fry for 3-4 minutes, or until the onions and garlic are softened and slightly browned. 3. Transfer the mixture into a food processor and blend to a smooth paste. Spread half of the paste over one side of each fish steak. 4. Tear off four 12in/30cm squares of aluminium foil and place each fish steak, paste side down, into the centre of each piece. Spread the remaining spice paste over each fish steak. 5. Scatter the sliced red onion over the fish and sprinkle over the green chilli. Fold up the foil and crimp the edges to seal and make four parcels. Place the parcels into a steamer, cover and steam for 20 minutes, or until the fish is cooked through (the fish should be opaque and flake easily when gently pushed at the thickest part). 6. Unwrap each parcel and lift the fish onto warmed serving plates. Spoon over the juices from the parcels and serve.

Ingredients For the panch phoran 1 tbsp brown or black mustard seeds 1 tbsp nigella seeds (kalonji) 1 tbsp cumin seeds 1 tbsp fennel seeds 1 tbsp fenugreek seeds For the fish curry 500g/17½oz thick white fish fillet, such as hake, haddock or snapper, skin on salt, to season, plus 1 tsp 2 tsp turmeric powder 3 tbsp vegetable oil 200g/7oz small waxy potatoes, such as Charlotte, peeled and cut into 1cm/½in-thick slices 100g/3½oz moong dal (mung beans; available in some supermarkets and Asian grocers) 1 tsp panch phoran (see recipe above) 1 tsp ground ginger 1 tsp Kashmiri chilli powder 1 tsp freshly ground cumin seeds 1 tsp freshly ground coriander seeds 900ml/1½ pints water 150g/5oz aubergine, cut into 1cm/½in-thick pieces 4-6 green cayenne chillies, halved lengthways 4 tbsp roughly chopped fresh coriander Method 1. For the panch phoran, place all of the panch phoran ingredients into a small screwtop jar and mix well. (The spice mix will keep for up to a year in this jar if placed in a cool, dry and dark area.) 2. For the fish curry, cut the fish fillet into pieces 2.5cm/1in thick, then season the fish pieces on both sides with some salt and dust with half the turmeric powder. 3.
