Everyday baking - by Kathleen & Aislinn: Snickerdoodle Cookie Ingredients 3 cups all-purpose flour 1 teaspoon baking soda 1 cup (2 sticks) butter, softened 1 1/3 cup granulated sugar plus 1/4 cup sugar 1 ½ teaspoons cinnamon 1 teaspoon vanilla extract 2 large eggs 2 ½ cups Quaker Oats Directions PREHEAT oven to 375° F. COMBINE flour and baking soda in mixing bowl. Beat butter (softened in microwave for 30 seconds) and 1 1/3 cups granulated sugar in another mixing bowl until light and fluffy. Beat in eggs and mix well with hand mixer. Beat in vanilla. Reduce speed to low; gradually beat in flour mixture and finish mixing in with a spatula. In small bowl, combing cinnamon and remaining 1/4 cup sugar. with hands, shape dough into 1-inch balls with a tablespoon. Roll in cinnamon sugar to coat. Place balls, 1 inch apart, on ungreased large cookie sheet. Bake 12 minutes, or until set and lightly golden and slightly crinkly on top. Cool on cookie sheet on wire rack for 1 minute. With wide spatula, transfer cookies to wire racks to cool completely. Makes about 2 dozen.

This is a traditional Christmas cookie that we eat around the holidays. Ingredients: 1 1/2 cups flour 3/4 tsp salt 1/2 tsp soda 1/2 cup brown sugar 1/4 cup white sugar 1/2 cup butter 2 eggs 1/2 tsp vanilla 1 cup whole pecans (then chop them finely) Cream together the butter and sugars then add the vanilla and eggs. Then add the dry ingredients and mix by hand. Drop in tsp on a non-greased baking sheet and bake at 350 F or 180 C for 10 minutes.

Lightly grease 2 baking trays, beat the butter and caster sugar until light and creamy. Add the beaten egg gradually beating well until combined. Stir in the sifted flour. Roll rounded teaspoon of the mixture into balls and place well apart on the prepared tray. Press in the four chocolate chips on top of each cookie.
