My second cooking show on how to make low carb comfort foods. Fauxtatoes are a great dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It's the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes.
Try this recipe; I think it'll be a hit with you as well!
Recipe:
1 Head Cauliflower
2.5 TBS Butter
1/3 cup Heavy Cream
1 Chicken Bouillon cube
1 tsp salt
White pepper to taste
Directions:
* Cook Cauliflower until fork tender. Drain well.
* Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scrape the sides of the bowl a couple times to prevent lumps.

Note: for the Italian alternative, I would eliminate the Chinese flavorings (Soy Sauce, meat, sesame oil, and egg) in favor of more garlic and Italian seasoning and spices. For Induction, you are limited to 1 cup of Cauliflower per day. This recipe was developed from the original at Linda's Low Carb recipe site. This is my first video in 2007, and I return to the kitchen in making my favorite new dessert, a low carb non-bake cheesecake. This cheesecake is better than any no-bake cheesecake mix that you would buy in the store. You have to try this one.
Recipe: (courtesy of Linda's Low Carb)
CREAMY NO-BAKE CHEESECAKE
1 packet unflavored gelatin
3/4 cup vanilla flavored sugar free syrup
24 ounces cream cheese, softened
1 cup heavy cream, whipped
"Graham Cracker" Pie Crust *
Prepare crust according to recipe for baked crust. In a small pot, sprinkle gelatin over 1/2 cup syrup and let soften 5 minutes. Heat and stir over low heat to dissolve gelatin completely. Beat cream cheese with remaining 1/4 cup syrup until creamy. Gradually beat in gelatin mixture. Chill until slightly thickened, about 1 hour, gently whisking occasionally to prevent lumps. Fold in whipped cream. Pour into crust and chill until set. Mine looked set after 2 hours, but I recommend chilling at least 6 hours.
Makes 12 servings

Per Serving: 368 Calories; 37g Fat; 7g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
"GRAHAM CRACKER" PIE CRUST
3 ounces almond flour, 3/4 cup
3 tablespoons flax meal
1/4 teaspoon salt
6 tablespoons butter, melted
1/3 cup granular Splenda or equivalent liquid Splenda
Mix dry ingredients in a small bowl. Add Splenda to melted butter; pour over dry ingredients. Mix well and spread in 9" pie plate or springform pan. Bake at 375º about 10-12 minutes until set and lightly browned. Cool, then fill pie. For baked pies, chill unbaked crust 1 hour before filling and baking.

Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn't Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Induction legal. Here's the recipe:
* 8oz pkg cream cheese
* 3 eggs
* 3 tsp Splenda or equivalent liquid Splenda
* 1/4 cup atkins Bake Mix *recipe below
* 1/2 tsp baking powder
* 1/2 tsp vanilla
* 1/4 cup Heavy Cream or buttermilk
Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.
