INGREDIENTS: 1 packet shortcrust pastry 3 tablespoons seedless raspberry jam 8oz / 225g caster sugar 8oz / 225g icing sugar 12oz / 340g ground almonds 2 medium eggs The whites of 2 medium eggs 1 teaspoon almond essence 2oz / 55g blanched almonds to scatter over the top METHOD: ·Pre-heat oven to 180 C / 350 F / Gas Mark 4 ·Butter your baking tin (a square or rectangular tin) ·Roll our your pastry (to about the width of the edge of a pound coin) ·Press the pastry into the base of the tin and along the sides ·Baste the pastry with a layer of jam ·Combine the caster and icing sugar with the almonds ·Mix the sugars/almonds together with the eggs, the egg whites & almond essence until smooth - the mixture becomes like thick cake mix ·Spoon the mixture over the jam layer, spreading it evenly ·Sprinkle the blanched almonds on top ·Bake in the oven for about 25 minutes TOP TIPS: ·Don't be too delicate, just go for it! ·If you have any mixture left over, make a smaller portion. ·almond Slices can be made in advance and frozen. Marzipan is something that I really enjoy. But Marzipan is traditionally very tedious to prepare. There are many steps to achieve the lovely morsels that come wrapped in special boxes at the holidays. However, in my endeavor to find a way to make this confection, I have found a way to make it quickly and easily. Traditionally when you make marzipan, you start with raw almonds and blanch them in boiling water. After draining you must peel them so they have no brown skin on them, then you have to grind them and proceed with the rest of the process. Well, who has that kind of time? It also explains why almond paste or marzipan is so expensive in the store. I recently priced it and a 4 ounce tube or can of marzipan, which is the equivalent of about 1/2 cup, was around $8.00!!! WOW! I start with Bob's Red Mill Ground almonds/almond Flour. You can start with any brand of almond flour. Honeyville also makes their own version. Equal parts of almond flour and powdered sugar go into the food processor or mixer, then add 1 tablespoon of almond extract and 4 tablespoons of Amaretto liquor, added 1 tablespoon at a time. I mean, why spend $20.00 on an expensive jar of almond butter, when you can easily make your very own and fresh spread for a fraction of the cost? I simply took almond meal, salt and grapeseed oil and stirred them to a nice consistency like a peanut butter would be. You could add sugar if you preferred it a little sweeter. Ghriyba (Ghoriba) is usually served the famous Moroccan Mint Tea. And it is, oh so good!!! Chewing from the inside, with a little crunch from the icing sugar and the flavors come together perfectly!! The taste of the almonds with the hint of vanilla mixing with the little bit of Orange Blossom Water I used to shape them, make these cookies unique and absolutely delicious. I have purchased the Orange Blossom Water in an Arab store, but I'm sure you can order it online if you can't find an Arab store near you. Its called almond chicken and here's how its made: Youll need: 12 chicken legs 1/4 cup flour 1/4 tsp salt 1/4 tsp pepper 1/4 tsp poultry seasoning 3 eggs 2 Tbsp milk 1 cup slivered almonds 1/4 cup butter Preheat the oven to 325. Then combine the flour, salt, pepper and poultry seasoning in a bag and in a bowl, combine the milk and eggs. Place each leg in the bag alone and shake to coat with the flour mixture. After dredging in the flour dip the legs in the egg mixture and then in the almonds. The surface of the chicken should be coated in almonds. Then place the legs in a well greased baking pan. Bake for about 2 and 1/2 hours covered until the meat falls off the bone. Halfway through the cooking dot the chicken with the butter cut up into small pieces. This recipe can also be made with two fryers cut into pieces.

Ingredients
1 14.4 ounce box honey graham crackers
1 cup (2 sticks) butter
1/2 cup sugar
1 1/2 cups slivered almonds or any chopped nuts of your choice
Instructions
Preheat oven to 325 degrees. Line a cookie sheet with foil, folding up edges of foil to form a
rim to prevent any spill-over from the butter mixture. Lay a single layer of crackers on foil. In a
saucepan, melt butter; add sugar and cook until the mixture is thick and bubbly. Spread butter
mixture evenly over crackers. Sprinkle nuts evenly over top. Bake for 7 minutes, turn pan and
bake for another 7 minutes or until golden brown. Cool slightly and remove from foil. Makes
about 26 bars.

Cut in shortening until mixture resembles cornmeal. Combine egg with almond extra; stir into flour mixture, mixing well and kneading gently for 30 seconds. Form into walnut sized balls. Place on ungreasted baking sheets. Dip chocstick into red food color and make a depression into the center of each cookie. Bake in 350 degree oven for 15-18 minutes. Cool and store in tightly covered container.
