www.freecoconutrecipes.com We are often asked at Tropical Traditions why we do not sell any packaged coconut milks. The answer is that we have never found a packaged coconut milk that meets our high standards. It is a processed product, and freshly made coconut milk will separate and spoil quite easily. The water is heavier than the natural coconut oil, so the water sinks to the bottom and the oil tends to float on top after leaving it sit for a while. Commercially packaged coconut milks must add stabilizers to keep the product from separating, and often these stabilizers are in such a small quantities that they are not listed as ingredients on the labels. It could be soy lecithin, or something like guar gum which can cause problems for people who are gluten intolerant. The product then needs to be packaged in air-tight containers to preserve it, and this is often done in metal cans that have aluminum inside, and potentially Bisphenol A (BPA). Since canned coconut milks are over 90% water, you have to be concerned about the source of water that was used in packaging as well. The best coconut milk is one you make fresh yourself! Since most people reading this probably do not live in tropical places where you have access to fresh coconuts, the best way to make fresh coconut milk is from a high quality organic dried coconut that is not treated with sulfites and is not sweetened. Ingredients:
•2 cups Thai jasmine-scented white rice (note that other types of rice, such as brown rice, will not work for this recipe)
•3/4-1 cup good-quality coconut milk (not "lite")
•2 cups water
•1/2 tsp. salt
•2-3 Tbsp. dry shredded coconut, unsweetened or sweetened (baking type)
Some green peas to garnish on top-optional
Preparation:
1.Place rice in rice cooker. Add the water, coconut milk, salt, and shredded coconut. Stir well (use a plastic or wooden utensil to avoid scraping off the non-stick surface). Cover and set to cook.
2.Once your rice cooker switches to "warm" mode, allow another 8-10 minutes for rice to finish "steaming". This will ensure your coconut rice is fully cooked and pleasantly sticky.
3.Gently fluff with chopsticks before serving (some of the shredded coconut may have risen to the surface - just stir it back into the rice). Taste-test it for salt, adding a little more until desired flavor is achieved.
4.Serve with Thai, Chinese, or Indian dishes of your choice.

I made a double recipe in the video, and also forgot to add the vodka - so this batch froze pretty solid. If you find you ice cream is too hard to eat, just let it sit in a sink filled with hot water and it will thaw pretty quickly. I used plastic tupperware for storage here, but always use glass for food products if you can. COCONUT BANANA ICE CREAM 1 can full fat organic coconut milk 1/4 cup honey 1 large banana 2 tsp lemon juice 3 Tbs dried coconut 2 Tbs Vodka (Optional: Lowers freezing point, makes ice cream smoother) Plus any fruit of choice - berries, mango, pineapple etc. • Place banana, lemon juice and honey in a blender and process until well mashed. • Add coconut milk, dried coconut and optional vodka and blend again. Meghan Recommends: • Freeze in ice cube trays for 3 or more hours, reserving about a 1/2 cup in the fridge. • Place about 3 cubes per person into the food processor, add some of the non-frozen mix and process until smooth.
